Chicken Cacciatore is a great Monday night dinner. Juicy, tender chicken pieces, smothered in a robust tomato sauce, chock full of vegetables—red peppers, onions, garlic, capers, mushrooms and olives. You can cook it all together, in one pot, or make the sauce separately and the simmer together with the chicken for 20 minutes. Per serving: 1 lean, 2 green, ~3 condiments
2 medium red bell peppers, seed and thinly sliced
2 cups of diced tomatoes
3 garlic cloves, thinly sliced
1 tsp ground cumin
1 tsp sweet paprika
1/8 tsp cayenne
1/4 tsp salt
1/4 tsp black pepper
5 ounces reduced-fat feta cheese, crumbled
9 large eggs
Chopped cilantro for serving
Note: feta cheese is high in sodium; therefore, we recommend only having this on occasion.
Heat oven to 375*.
Heat sprayed large skillet over medium low heat.
Add bell pepper. Cook gently until very soft.
Add garlic & cook until tender, 1-2 minutes.
Stir in cumin, paprika, cayenne & cook 1 minute.
Pour in diced tomatoes & season w/salt & pepper; simmer until tomatoes have thickened, about 10 min.
Stir in feta.
Gently crack in eggs over tomatoes.
Transfer skillet to oven & bake until eggs are just set, 7-10 min.
