  • Been Traegering a ton in the rain this past week.  Been getting messages asking if im concerned that the rain will give the Traeger issues.  Ive been Traegering past 5 years rain or shine and never have i had weather affect any cooks.  Traeger puts tons of hours with these grills getting wet.  Ive got to see first hand heavy misters running directly over these grills at HQ while cooking food.  Theres a lot of time and money that goes into making these grills run the best they can.  As soon as something comes up that might affect the grill in any way, they are on top of it to correct it for the next line.  I guarantee Traeger is in its own league when it comes to hours and money spent to ensure the customer will be satisfied.  #TraegerAllYear 🤙

💖🐷Here’s an update: While attempting to move her over to hang with my other @traegergrills, I slipped in the mud and she tipped over. I screamed like I’d murdered someone. Considering she weighs 165 lbs., I have not been able to lift her back up. But while feeling terribly guilty about leaving her tipped over in the rain, I remembered pigs are completely happy rolling around in the mud. And since I don’t want to rupture a third disc in my back, I am going to let her enjoy the mud until I can get the help of a few strong friends to get her back on her adorable feet. (Well, actually they’re rolling casters. 😊) •
💖🐷In the meantime, while piggy napped, I cooked my tail off (get it? 🤣) yesterday on my other #Traegers and can’t wait to share what I made with you. (Some of it was @BelCampo meatco pork so it’s probably a good idea she was stuck around the corner.) •
💖🐷And the best news? She finally has a name. Meet Poppy the Pig Grill. We are going to have so much fun together Poppy. (And for those of you who keep asking, yes, these grills are real wood-pellet Traegers and are for sale on Traeger’s site and many other fine retailers. But Poppy is all mine. 😬)

  • I love to meal prep chicken bowls for a few reasons:

1. Usually super easy
2. Grilling/baking chicken = less mess
3. Tons of protein and veggies

These Chili Garlic Chicken Quinoa Bowls with Bang Bang Sauce definitely check all of those boxes. Give it a try and let me know! Recipe below:

Chili Garlic Chicken Quinoa Bowls with Bang Bang Sauce
24oz chicken tenders 
Marinade:
2 tbs chili garlic paste
2 tbs soy sauce
1 tbs red wine vinegar
1 tbs honey
1 tbs ginger grated 
3 cloves garlic minced

Bang Bang Sauce:
1 cup green yogurt
1 tbs chili garlic paste
1 tsp sriracha
2 - 3 tbs red wine vinegar
Salt and pepper to taste

Toppings/side:
2 cups quinoa
2 cups shredded carrots
2 cups cucumbers diced
Toasted sesame seeds
Green onion

Put the chicken and marinade ingredients in a large plastic bag. Shake until chicken is covered and then place in the fridge to marinate for at least 30 mins.

For the grill:
Turn on your Traeger and set to 180. Place the chicken on the hot grill and let smoke for 30 minutes to 45 minutes. Check periodically to make sure the hotter spots in the grill aren’t cooking too fast. After 45 mins increase the temperature to 350 and let cook for 10 - 15 minutes more. Make sure the chicken is at least 165 before removing. Remove chicken from the grill, cover in tin foil and let rest.

For the oven:
Heat oven to 400. Prepare a baking sheet by spraying with non-stick cooking spray. Place the marinated chicken on the baking sheet and cook for 20 - 25 minutes until the internal temp is 165. Remove from oven, cover in tin foil and let rest.

Cook quinoa according to package directions and prepare toppings. Mix together the ingredients for the bang bang sauce and combine everything in a bowl!

Serves 5

Last night I posted that sometimes I’ll go to the “last chance” section of the grocery store and buy a bargain steak. It’s a way I remind myself where I came from. To remind me of who I am and what I’m capable of. At the same time I’m  also not afraid to indulge. I’m proud of my success, proud of how far I’ve come and I think that as important as it is to stay humble it’s equally important to celebrate the good moments, the highs, and the successes. There were nights during my life where I could have only dreamed of eating a cut of meat like this. So when I can I treat myself, I do. Wherever you are and whatever you’re doing know I’m about to enjoy the hell out of this. What do you do to celebrate?... #traegergrills

In addition to turkey this year for Thanksgiving, I threw these dino ribs on for a bit of a change up. Seasoned with @southbound_que’s Moo Moo Magic, they came out with an amazing bark. This rack took about six hours with the KJ locked in at 250°.
