  • Roast Pumpkin & Couscous Salad! 😍 This recipe is SO simple to make and perfect to enjoy with friends and family over the festive season! 👌🏼 Try it out:

✨FULL RECIPE✨ [Serves: 6] ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
1️⃣ Preheat the oven to 200°C conventional or 180°C fan forced. To a large bowl add 750g diced pumpkin, 1 red onion (cut into wedges), 1 can chickpeas (drained & rinsed), 2 tbsp olive oil, 1 tsp smoked paprika, 1 tsp cumin, 1 tsp coriander, 1 tsp mixed herbs & salt + pepper. Spread evenly onto a lined baking tray and bake until pumpkin is golden and cooked through. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
2️⃣ In a small saucepan bring 1 cup veggie stock to the boil, turn off the heat then add in 1 cup @SanRemoPasta couscous. Pop the lid on and allow to stand for 5 minutes. Remove lid and fluff up with a fork to separate the grains. Set aside to cool (I love that it only takes 5 minutes to cook! So quick and convenient). ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
3️⃣ To assemble, combine the pumpkin + onion + chickpeas, couscous, 1 packed cup of rocket, 1 small bunch of mint (roughly chopped), juice of 1 lemon and a top with a handful of pine nuts. Season with salt & pepper to taste if desired. Serve! 🍽🌿

  • Vegan “Honey” Mustard Tofu Tenders: Don’t you love that the more you do something the better it gets. I think that applies to lots of things including preparing TOFU! In this recipe I toasted my panko prior to baking. You are going to love this tofu recipe cause  it has lots of CRUNCH on the outside with a tender yummy interior layered with a vegan honey mustard sauce. Happy Thursday foodie friends 🙃💕
What you need: 15 oz block of pressed tofu, 1/2 cup Dijon mustard, 1/2 cup agave, 1/4 cup yellow mustard,  1/4 cup vegan mayo, 1 1/2 tsp salt, 2 cups panko, 2 tbl neutral oil, 1/3 cup cornstarch What you do: 
1️⃣ Cut pressed tofu into 3 slabs through its depth, then cut each slab into 3 equal size tenders, lightly score slices with a knife on both sides,sprinkle with salt. Set Aside
2️⃣In a bowl mix mustard, agave, mayo, & salt/pepper
3️⃣Use 1/2 of mustard sauce to marinate tofu slices. I used a brush to make sure all edges and sides were covered. Marinate for at least 30 min.Place in fridge
4️⃣ In saute pan, over medium heat, heat oil till warmed ( toss panko crumb in to see if it sizzles) add panko. Stir continuously for 5 min till panko changes to a golden brown color. Turn off heat, leave in pan, let cool
5️⃣ Set up 4 stations to bread tenders: 1 plate with corn starch, a bowl with remaining mustard sauce, panko in pan, and lastly a rimmed baking sheet lined with parchment paper with a wire rack on top (optional but recommended)
6️⃣ Take one tofu tender, dredge in corn starch (shake off excess) dip into mustard sauce, then press tender into panko crumbs covering all edges, place on rack/parchment paper. Repeat 
7️⃣ Bake 400 F for 30-35 min flipping half way through cook time. Enjoy!! I served mine with the remaining mustard sauce for dipping & added some cayenne pepper for some heat and chopped green onion to give a pretty color pop 💚

i used to eat nutella religiously as a child! slap that stuff on toast and that was my breakfast for YEARS! so u could say this bowl was inspired by my nutella obsession back in the day?! 🤪@pana_organic choc hazelnut spread is far superior to nutella any day! DONT U DARE FIGHT ME! 😡 it was a phenomenal addition to my usual choccy oats 😋 if ur able to get this spread, GET IT 🤪

  • I don’t know what I just made but oooooooh baby it’s good and spicy!!! Yum! Chickpea Rotini Pasta, Vegan Sausage,  Broccoli and Chipotle Poblano Sauce (?). First I cooked onion, garlic and poblano pepper in a bit of olive oil. Once it was cooked, I added 2 tbsp of gluten free flour but will probably add 4 next time. Then added 2 tsp of @betterthanbouillon vegetable bouillon and 4 cups of water. In a blender I blended one diced poblano pepper, a small can of chipotle peppers and a can of coconut cream. I added that to the sauce I was already making and simmered it all together for about 15 min. In a separate pot I cooked the sausage then added the sauce to that. Once the pasta was cooked and drained, I added frozen broccoli and the sausage sauce mixture. Served with a generous sprinkle of nutritional yeast and voila!   • “Beans and Rice is so bland”
Okay Janet, sure if you don’t make it right. Literally my favorite meal right now. It’s so delicious, filling and so quick. 
INGREDIENTS
* 1 tablespoon olive oil
* 1/2 cup onion finely diced
* 2 teaspoons minced garlic
* 1 1/2 cups long grain white rice uncooked
* 1 teaspoon ground cumin
* 1 teaspoon Chili powder (opt)
* 1 teaspoon red pepper (opt)
* 3 cups chicken broth
* salt and pepper to taste
* 2 15 ounce cans black beans rinsed and drained
* 2 tablespoons lime juice
* 1/3 cup cilantro leaves chopped
* 2 small zucchini (opt)
* 1 bell pepper diced (opt)
* 8 cherry tomatoes- diced (opt) * Heat the oil in a large pot over medium heat. Add the onion and garlic, and cook for 2-3 minutes or until tender. * Add the rice and cook for 1-2 minutes. * Add the cumin, chicken broth, salt and pepper. Bring the pot to a boil. * Cover the pot and turn the heat down to low. Simmer for 15 minutes or until rice is tender. * Stir the beans into the rice. Cover the pot and let sit off the heat for 3-5 minutes or until beans are warmed through.
* * Sauté zucchini, bell pepper and tomato until zucchini is soft * Stir in the lime juice and cilantro. Fluff the rice with a fork. Add zucchini, tomatoes and bell peppers. Taste and add more salt and pepper if desired.

  • oh hai! today was a day where things could have gone better. i fell off a chair and knocked my knee (in the same spot where i got a gash and a bruise last week), i burned my lunch, i dropped about a hundred things and knocked another hundred things over. i am stressed af and generally just wanna scream and break some stuff. i texted my husband and told him how utterly shit i feel and he told me to start over - to try again and acknowledge it was just a few blips in the grander scale of things. he told me to do my makeup again (from all those tears!), to go for a walk and simply try again. simple enough right? it really was! I took a few breaths, walked out my door and bought some kombucha and an avocado. I came home and lit a candle and turned on some 90s bangers on Spotify. then I started again. I made another meal, i fixed my makeup and i tried again. cheers Adam for being annoyingly correct once again! 😉

  • Carpaccio de zapallitos + ensalada de lechuga, pepino y naranja + mayonesa de zanahoria. 🥒🥬🍊🥕.

Recetas muuuuy fáciles, así vamos necesitando cada vez menos la comida procesada del supermercado. 
Tratar, en lo posible de que las verduras sean orgánicas o agroecológicas, así nos cuidamos  a nosotros y al planeta 🌎🥳 .

Para el carpaccio de zapallitos: 
2-3 zapallitos o zuchinis
1-2 limones
Alcaparras o pepinillos
Aceite de oliva virgen extra
Pimienta 
Sal rosada 🥒🥒🥒.
.
Preparación: 
Cortar los zapallitos bien finitos, idealmente con mandolina.
Montarlos en un plato o fuente. Agregar el jugo de limón, agregar un chorrito de aceite de oliva, salpimentar, y dejar reposar una 1 hora por lo menos antes comer, para que el zapallito se ablande y absorba el gustito. 
Decorar con alcaparras o pepinillos picados. 
Demasiado fácil 💁🏽‍♀️ .

Para la mayonesa de zanahoria: 
Zanahorias
Agua de cocción de las zanahorias
Sal 
Condimentos a gusto: pizca de canela, tomillo, ajo, salsa de soya, tomates secos, etc.

Preparación: 
Pelar y hervir las zanahorias. Procesar junto a los demás ingredientes. Ir hechando el agua de a poquito para que no quede muy líquida.
Muuuy fácil 🥕🥕🥕🥕
