Ingredients:⠀
Spicy Paste:⠀
1-2 red chilis, or more depending on their size ⠀
1 tsp garam masala ⠀
2 tsp ginger, peeled and chopped ⠀
4 shallots, chopped ⠀
1/2 tsp coriander ⠀
3 garlic cloves, chopped ⠀
2 tsps ground turmeric ⠀
2 tbsp water or buy paste ready-made⠀
⠀
The Broth:⠀
2 cups vegetable broth ⠀
1 1/2 cups coconut milk, full fat ⠀
1/2 cup butternut squash (I used organic canned for the broth)⠀
3 tbsp liquid aminos (or tamari sauce or coconut aminos) 
1 tbsp coconut sugar ⠀
1-2 tsp turmeric ⠀
2 tbsp lime juice  pinch salt⠀
⠀
Other Components ⠀
1 broccolini stalk per serving ⠀
1/4 cup sundried tomatoes ⠀
1 cup shiitake mushrooms (white button can also be used)
1 cup butternut squash (or sweet potatoes) (whole veggie, peeled, chopped) ⠀
1 tsp black sesame seeds⠀
⠀
Instructions:⠀
For Paste:⠀
Heat olive oil in a skillet, just enough to coat it. Slice the chilis in half and throw away the seeds. Stir fry the chilis for a minute or two, then toss them and the rest of the paste ingredients into a food processor (I used a mini one) and blend into a lumpy paste (add more or less water to achieve a paste) and set aside.⠀

For the Broth ⠀
Heat the broth in a pot. When steaming but not boiling, pour in the coconut milk, stirring as it separates. Stir in a few tablespoons of the paste you made, and then the rest of the broth ingredients. Keep stirring until soup becomes thick. I used a thermal blender so I just finished off the thickening by putting my soup in there for a hot spin, but if you don't have a thermal blender, keep simmering for about 1-2 minutes, keeping up with the stirring.

Ingredients:
~ 1 package of firm tofu, drained and mashed
~ 1/2 cup packed Thai basil leaves
~ 7-8 Thai chilies, chopped
~ 5 cloves garlic, minced
~ 3-4 shallots, minced
~ 3 tablespoons coconut amino
~ 1 tablespoon soy sauce
~ 3 tablespoons vegan 'fish' sauce*
~ 3 teaspoons coconut sugar
~ 1 teaspoon salt
~ 1 tablespoon avocado oil

Whisk coconut amino, soy sauce, 'fish' sauce, sugar and salt in a bowl until well combined, set aside.
In a nonstick pan with low-medium heat (no oil), pan-fry mashed tofu until golden brown to get the chewy texture.
Using the same pan, push tofu aside, add 3 teaspoons oil and sauté garlic and shallots until soft. Add half the sauce, mix with tofu and let simmer for 2 minutes. Then, add chilies and remaining sauce and let the sauce thicken (when sugar caramelized). Finally, stir in basil and serve warm with your favorite grain.
* Closest sub that I can think of for fish sauce: 1 tablespoon vegan sugar, juice of 1 lime, 1 tablespoon soy sauce, 1 tablespoon water, and chopped Thai chilies. #bestofvegan

  • Not much is different now that I am crashing at my mom’s for the night. Still prep my meals, still get work done. ✅ I’ve been particularly loving this meal prep of kale and quinoa salad. It was something I made constantly while I was doing my Dietetics internship, and even now I still crave it regularly. 🤩

In my snack container I included a bunch of fruit because I will probably need the sweetness midday. I used some kiwi, strawberries, blueberries and blackberries. 🍓And in the other container I made a massaged kale and quinoa salad. Took some raw kale, squeezed some lemon juice, added a spoonful of tahini and a pinch of salt over top. Then with my hands I just massaged the greens with my fingers until the leaves started to become tender and a brighter green. 🍃The greens should shrink significantly, and at that point you just need to toss the kale with some quinoa plus whatever extra veg and protein you’d like. I went with corn, edamame, cherry tomatoes then flavored with fresh minced basil, onion powder, oregano, and cracked pepper. 🍱

  • Hace unos días he realizado un co-emulsionante especial con base en #ceradesoja , #karite , #mantecadecacao y algún otro ingrediente... Emulsiona muy bien y muy rápido pero no da consistencia y queda líquido... Y me preguntaba qué productos podría crear con el... Había pensado en una crema en spray como protector solar, o para aplicar en spray según sales de la ducha, o una crema capilar también para aplicar en spray.... El caso es que dejé ahí la idea dando vueltas por mi cabeza mientras yo me centraba en otras cosas... Y hoy han aparecido por mi mente algunas ideas... La primera de ellas te la explico ahora... ¿Te acuerdas de la fondant de ducha que se hacía antes? Era sólida y se deshacía con el calor del agua en la ducha, verdad? Pues algo dentro de mí me pedía hacer un gel de ducha sólido que hiciera espuma pero que a la vez dejara la piel suave...y aquí es donde entra la idea de la fondant. Así que pensé en incluir este emulsionante en el gel de ducha sólido de tal manera que cuando el agua caliente entre en contacto con el gel sólido por un lado hará espuma y limpiará y por otro lado creará la crema líquida... Me parecía muy pretencioso por mi parte y tenía dudas sobre si funcionaría como yo había ideado, por eso no he publicado nada hasta que lo he probado. La verdad es que me ha dejado la piel súuuuuuuuper suave, así que empiezo la semana con muy buen pie.

La receta base que puedes seguir es la siguiente: 50gr sci, 5gr scs,5gr tensioactivo suave, 5gr emulsionante, 20gr avena, 2gr inulina, 10gr aceite oliva, 5gr de agua.

Tendrás que elegir bien el emulsionante que vas a utilizar...

  • Qu'est ce qu'on était bien hier avec @vine_and_vegetables pour cet atelier vin et cuisine végétale srilankaise !
On s'est délecté de samosas, rotis, raita,  iddyappa noodles et payassam. Le tout 100% bio, de saison et au maximum local. Merci Claire pour l'accompagnement en cuisine et le choix méticuleux des 2 vins naturels. 
Tout était au top même le chat sur le toit !

  • Beautiful Shots - Happy Monday! I love love love my early morning apple and ginger shots. It’s like my whole body instantly wakes up and in seconds and I’m ready for the day!  It’s day 6 of me predominantly juicing and here’s my update as promised! 
It hasn’t been nearly as hard to do this as I thought. I’m not hungry at all, I wonder if it’s because my body is getting lots of nutrients. I’m also taking Vitamins B Complex, Spirulina and Chlorella and probiotics. 
Yesterday,  I thought I would try and eat a solid piece of fruit, so I had a banana, and my stomach wasn’t so happy about that! But please note that I have suffered with tummy problems all my life! 
According to the scales I have lost 3lbs so far, I thought it might be more because my clothes feel a lot looser. I guess my body is still adjusting. 
My skin looks clearer and I’ve noticed my dark circles under my eyes are going. I feel energised and I’m sleeping well. This way of life suits me and I intend to continue for another week at least, but introducing liquidised vegetable soup for one meal. 
Please note that I have been a vegan for over a year now (vegetarian before that), I haven’t had alcohol for 10 years nor refined sugar. Therefore, my changes maybe more subtle than someone else.

@b_freshjuice Juices are all delicious, there genuinely isn’t one I don’t like. They really taste fresh and authentic, as if straight out of the juicer. They are fantastic value too. #mondaymotivation
