  • Banana Oatmeal Breakfast Bars, 3 ingredients!  Vegan and gluten free 💚👍 This recipe is so easy to make, pals! Recipe 📸 by thebigmansworld! Ingredients: 1 cup peanut butter (can sub for any nut or seed butter), 4 cups gluten free rolled oats (can sub for quinoa flakes or buckwheat flakes), 6-7 medium bananas mashed, 1/2-1 cup chocolate chips of choice (Optional). Method 👉🏼 Preheat the oven to 175C/350F. Line an 8 x 8-inch pan with parchment paper and set aside. In a large mixing bowl, combine all your ingredients and mix well. Fold in your chocolate chips, if using them. Transfer the batter to the lined pan and bake for 12-15 minutes, until golden on top and a skewer comes out the center clean. Allow oatmeal breakfast bars to cool in the pan for at least 10 minutes, or until firmed up enough to remove. I used raw cashews, sunflower seeds, and activated buckwheat groats from @nakedfoods

<Recipe>
◆Ingredients (16cm/ 6.3’’ silicone round cake mould)
◾️Base: 
100g activated buckwheat groats
40g raw walnuts 
3 Tbsp. sunflower seeds
2 Tbsp. melted raw cacao butter or melted coconut oil
1 Tbsp. raw cacao powder
2 Tbsp. raw cacao nib
4 pitted soft Medjool dates (80g)
1/8 tsp pink salt
. ■Earl grey layer:
120g raw cashews (soaked 4-6 hours and rinsed)
1/2 cup (120ml) coconut cream
4 Tbsp. (40g) melted raw cacao butter
4-5 Tbsp. raw agave or maple syrup
1 Tbsp. Earl Gray tea leaves (If you use broken tea leaves, reduce the amount.)
1/4 tsp vanilla paste 
Pinch of pink salt or good quality salt
■Chocolate layer: 
120g raw cashews (soaked 4-6 hours and rinsed) 
1/2 cup (120ml) coconut cream
4 Tbsp. (40g) melted raw cacao butter
5-6 Tbsp. maple syrup
4 Tbsp. raw cacao powder 
1/4 tsp vanilla paste
Two pinches of pink salt or good quality salt
◾️Method : (1) Pulse every ingredient for the base until well processed but still slightly crumbly. Press the mixture into the base and sides of the silicone mould. (2) In a high speed blender place every ingredient for the Earl grey layer and blend well until smooth. Add more sweetener if you need. Layer the filling above the crust. Cool it in the freezer until set. (3) Repeat the same process for the chocolate layer. Freeze the cake over night (4) Take out from the mould and garnish with fruits.**You can substitute maple syrup & coconut cream with raw agave & raw nut milk for raw version

eating disorders live in the mind. physical manifestations are secondary to the root cause. it’s a head game. your mind is a control system that’s been hijacked, and the body responds to all commands. it knows they’re wrong, but it’s deeper than that. the hardwiring has been targeted and setting that straight is anything but a linear process.
.
so when i finally began recovering, nobody could tell.
.
my recovery was slow. i saw the changes i made as drastic. on the outside, the 12-foot hurdles i was throwing myself over were nothing more than bumps in the road.
.
it's HARD to face demons when only you can see them. my family was my greatest support system. but they couldn’t understand the paranoia.
.
recovering from a mental illness is like being alone in a crowded room. nobody can push you to face your monsters. nobody can see them. they don’t make sense to anyone else. my disorder led me to fear things i knew were irrational but suffocated me anyway. sleeping through the night without sneaking a workout. using mugs without washing them 4x, in case a granule of sugar lingered from the last use. sitting in the high school cafe instead of a bathroom stall, even though i was convinced being NEAR a bagel would cause weight gain.
.
nobody said to me, “good job using a mug today” because nobody knew that specific fear was even an issue. i relapsed over and over. why? i waited for someone to see the problems i needed to fix in order to justify me fixing them. when i finally accepted that seeking external praise was crippling me (and that it wasn’t coming!), i was able to save my own life.
.
in a culture that’s conditioned to look outwardly to gauge success, facing invisible fears feels like a waste. i was discouraged to keep facing small fears because nobody was noticing.
.
i’ve learned that you have to carry yourself. because while your struggles feel invisible to everyone else, they’re not to you. you can see them...so face them. .
.
as my mom always says , “only you can help yourself”. so do it. you’re stronger than you give yourself credit for ✨

  • Broccoli quinoa casserole by @elavegan 🧡

Ingredients
Quinoa
•1 cup (170 g) quinoa
•2 cups (480 ml) salt water or vegetable broth
•1 cup (240 ml) dairy-free milk
•1 15 oz can chickpeas
•Spice mix: 1 tsp onion powder, 1 tsp ground oregano, 3/4 tsp paprika, 1/2 tsp salt, pepper to taste
Broccoli
•1 medium-sized head of broccoli
•1 tbsp oil
•A pinch of salt
Homemade "breadcrumbs":
•3 tbsp oats (gluten-free if needed)
•1 tbsp nutritional yeast flakes
•1/2 teaspoon onion powder, 1/2 tsp paprika, a pinch of turmeric, 1 tsp soy sauce (gluten-free if needed), a pinch of smoked paprika, salt, and pepper to taste
•1 tbsp oil
Cheese
•1 batch homemade vegan cheese sauce (see: elavegan.com/easy-vegan-cheese-sauce-recipe) or 7 oz (200 g) of store-bought vegan cheese
Instructions
Prepare quinoa
•Bring a pot with 2 cups of salt water or vegetable broth to a boil and preheat oven to 400F/200C
•Rinse quinoa thoroughly under running water and put it into the water/broth as soon as it boils. Simmer for 15-20 minutes until no water is left and the quinoa is cooked.
Prepare broccoli
•Cut the broccoli into florets, spread on a baking tray (lined with parchment paper) and drizzle with 1 tablespoon oil and a little salt. Toss with your hands and bake the broccoli in the oven for about 15 minutes. Meanwhile, prepare the vegan cheese sauce. (Skip this step if you use store-bought cheese).
"Breadcrumbs"
•Put all ingredients for the "breadcrumbs" (except the oil) into a small bowl and stir with a spoon.
•Heat the oil in a saucepan over medium heat, add "breadcrumbs" and fry on low/medium heat for about 30-60 seconds.
Assemble Casserole
•Add 1 cup of dairy-free milk, the spice mixture, the chickpeas and half of the cheese sauce (or store-bought cheese) to the quinoa and stir.
•Transfer the quinoa mixture into a lightly greased casserole dish, add the broccoli florets and spread the rest of the cheese on top. Sprinkle with the "breadcrumbs".
•Reduce the heat of the oven to 350F/180C and bake the casserole for about 15-20 minutes. Enjoy! #bestofvegan [Recipe as posted on elavegan.com]

  • For Tommy’s Birthday we had a dinner party in our backyard! 🎉 Hopefully the first of many! Keeping these kinds of events low waste can be hard, but I think we did well! A party of about 15 people produced a literal handful of trash! We’ll have to make adjustments for larger gatherings, but here are some things that worked for us this time!

🌱 BYOB: and by that I mean, bring your own bowl! The majority of party related waste tends to result from single use utensils, plates, and napkins. Encourage guests to bring their own from home! OR...
🌱 PARTNER-UP: with a local guest and ask if they’d be willing to contribute their plates and/or utensils for the day!
🌱 GO HOMEMADE: ordering take-out or having an event catered means acquiring plastic, and tins, and cardboard oh my! By making a meal yourself, you control how much waste you’re producing. It may not be 100% zero waste (what really is??) but I can promise, it’ll be far more sustainable than take-out!
🌱 CROCKPOT MEAL: love the idea of a homemade meal but don’t want to spend all day over a stove? That’s why crockpots were invented! We chopped and prepped chili the night before and stored it in the refrigerator overnight. The morning of the party, we turned it on and forgot about it for 8 hours. By the time our guests arrived, our apartment smelled great and dinner was ready!
🌱 ENCOURAGE PROPER DISPOSAL: have a bin each for compost, recycling, and trash clearly marked.
🌱 ENJOY YOURSELF! Don’t worry if things don’t go as planned and you wind up with more trash than you anticipated. You made a HUGE difference and learned so much for next time! And who knows, maybe you inspired someone else in the process!
