Have you ever made homemade walnut butter? It might be my MOST favourite of butters.
The texture is like velvet and it tastes incredible. Check it out looking extra dreamy on a bowl of blueberry oats with coconut yogurt.
To make it, toast 4 cups of walnuts, either stovetop or in the oven. This brings out the most amazing flavour and helps the natural oils release a little easier when you start blending.
I do it stovetop in a skillet over medium heat. It takes 5-10 minutes until they're fragrant and just starting to brown a little. Just be careful you don't burn them.
Once toasted, add to a @vitamix and start blending on low. Slowly increase, using a tamper or stopping to scrape down the sides as needed, until completely smooth and creamy. This can take up to 10 minutes. I add 1 tsp of coconut oil for a creamier texture and a pinch of sea salt for flavour. If you'd like a little sweetness, you can add 1 tbsp maple syrup, raw honey or another sweetener of choice.
That's it! Scoop it into a container, store in the fridge, eat with a spoon, add to EVERYTHING.

My gorgeous sweet girl Mabel ☺️We rehomed this little nugget a couple years ago, her old owners had neglected her and she hadn’t had any social interaction and was very aggressive and unsociable. The people at the rescue centre had nicknamed her ‘psycho bunny’ 😒 it took about half an hour and three staff members to get her into a box so we could take her home.
Her bottom was really matted too due to not being looked after properly, she was also overweight as she was just stuck in a hutch all the time 😡

What is it about not being able to have something that makes you want it more?? Got some information from my naturopath of foods I should be limiting in order to reduce my flare ups. But until my blood tests get back, I’m gonna keep being the rebel I am and eat everything 😬. Full video is linked in my bio.

Y como buena amante del queso en todas sus versiones (desde fresco hasta súper añejo), intento no abusar pues aunque es un alimento con un buen aporte protéico, de calcio, vitaminas A, D...también lo es en colesterol, grasas y sodio! Por lo que os aconsejo que optéis por versiones más frescas, ligeras y bajas en sal.😉

When I was a little child I used to hate beetroots because there was this aweful dish in kindergarten that they made us eat which I absolutely did not like.
However the older I become the more adventurous I get with food and since I know beets have lots of health benefits especially for runners I decided to reintroduce this powerful food back into my diet.
It can help lower blood pressure, boosts stamina, has anti-cancer properties, supports the liver and is rich in vitamins, minerals and fiber. Just know that it is also the vegetable with the highest sugar content so if you have a problem with sugar you mind want to go easy on the beets.
Personally I love beets in juices and smoothies and blended into hotcakes/waffles for color and nutrition and recently I also added it to hummus which turned out beautiful.

Truth is, I've been wading waist-deep in the blues these last couple of days. Not only literally, but also emotionally. My mind says "Bee, look at the light glistening off those waves", and yet my heart still partially shields itself in shadow.
I've been reflecting a lot on what it means to have a kula -- a spiritual family. I pride myself in having cultivated some shimmering, deep-rooted connections with those around me over the years. My closest friends are sisters and brothers of mine. We flow and feel and grow intimately together.
I haven't found that here quite yet. (Except for Aksel, for whom I'm eternally grateful... but I know I cannot depend on him to keep my happiness around). I've been chatting with the ocean a lot. I sit by her side and thank her on the daily. I massage my own feet and I observe the eagles and crows flying above my head. I smile at the trees.
I do feel lonely. A bit heavy, perhaps. I have been crying a lot. For some reason, this is precisely what I need in this moment. Solitude can be a wonderful, impactful, and (occasionally) harsh teacher. Time to welcome her. Time to learn.

Freelancing was off to a rough start yesterday. I felt a little lost and disappointed I didn’t have this surge of energy to follow the schedule I made for myself. But I’m not beating myself up about it. It’s going to take time to figure out my flow and allow myself to misstep. As long as the work gets done, who cares if I did it laying down all day in my pajamas and ate three plates of lasagna? 💁🏼♀️ (today I’m going a little healthier with a squash banh mi and heirloom tomato gazpacho at @hubcafelincoln)

So of course I had to try! And the verdict? Pretty dang tasty and pretty dang convenient.
Not sayin’ it’s the healthiest plant-powered option around, but alwaysss stoked for more accessible and ever-expanding vegan goodness around the globe!
So whether you’re a vegan looking for a quick and easy vegan meal, need a place that suits you AND your not-so-vegan peeps, an omni looking for a healthier option or something new, someone who’s making the transition to a plant-powered lifestyle and needs familiarity, or just a person who loves veggie-ful pizza for that matter... good on you Domino’s Australia for making vegan more accessible to all!
There’s lots of opinions out there from vegans on mainstream companies adding vegan options to the mix of their menus and business practices. I for one am ALL for it. Because why not support the spinning wheel of progression? Why not make healthier options easily accessible? Why not show businesses that this is what people want? Why not be a supporter of the change you wish it see in the world? I fully believe every little positive push has influence, no matter what your reason is for practicing veganism.
So cheers to a simple plant-powered meal that actually means a lot in the scope of things. Hope your week is full of beauty, awe inspiring moments, and great food my friends!

Today marks the first day of #mentalhealthawarenessweek and will run till Sunday 19th May 🌿
I want everyone to realise that online not everything is as it seems. Just over two weeks ago I was diagnosed with moderate depression and you might be thinking “oh but all your posts are so positive! How can you be unhappy?” but I want to make it clear that I am the classic example of how not everything online is representative of reality.
It’s possible that positive role model figures on Social Media are people that struggle with mental illness and it’s worthwhile viewing these people as no different from ourselves.
In times like today and this week where mental health awareness rises substantially due to everyone wanting to or wanting to appear supportive, it’s important to note that every single effort helps.
The sorts of things that I ask of people are also things that may benefit you if you also suffer from mental illness or believe that you may be susceptible to it. Because 1 in 8 people are struck by mental illness in their life time.
- listen to those that are brave enough to speak up. Don’t wait your turn to talk, simply listen to them
- don’t try to solve the problem, you are not a doctor and it is not your job to “cure” someone’s mental health. Support them and help them heal as mental health isn’t a disease, it’s a persons wellbeing that will be with them for their entire lives
- don’t treat people differently because you know they are suffering. I for one can’t stand being babied or spoken down to
- consider what is toxic within your life and ask yourself whether it is truly worth still having that toxic factor in your life. Does this benefit you? If not, cut them or it out.
MH should be spoken about all year round but let’s focus on the progress we have made so far and make the most of mental health awareness week.
