Most of you know my obsession with mangoes by now- how I endlessly wait for summers just so I can eat (at least) a mango a day! Each day is a celebration when you’re devouring the delicious mango! Pictured here are some yummy Mango cubes infused with Vodka (feel free to skip the vodka and serve it to your kids- they will LOVE it!) & Lime juice. You can use a sweetener of your choice if you’d like and top it off with some AWESOME vegan Vanilla Ice cream 🍨.
This is a fantastic dessert idea and perfect to make when you’re entertaining (or even when you just want to chill and read a good book). ⠀⠀⠀⠀⠀⠀⠀⠀

Tahini caramel cookies! 💥
One of my favorite flavor combinations is tahini + maple syrup - I love to use it as a sauce for pancakes or dipping sweet potato fries. But then I thought, this natural caramel flavor combo deserves more than that...it deserves to be in a cookie. So this is that. They’re chewy, vegan, gf and sweetened with maple syrup! 🍁
1/3 cup tahini
1/3 cup maple syrup
1 tsp vanilla extract
3/4 cup almond meal
1/2 cup oat flour (blend up oats if you don’t have this on hand!)
1/2 tsp baking powder
1/2 tsp baking soda
Pinch of salt
1/2 cup sesame seeds (optional)
Preheat oven to 350F. In a small bowl, mix together the maple syrup, tahini and vanilla. In a separate bowl, combine the almond flour, oat flour, baking soda + powder and salt. Add the dry ingredients to the wet and mix until a dough forms. Taking one to tablespoons of dough at a time, roll them into balls and coat in sesame seeds. Flatten them out with a fork and bake for 10 minutes. They will be very soft when you take them out of the oven, that’s okay! They’ll firm up as they cool. Let cool completely and enjoy 😋

Sweet Rituals in Austin Texas made all my dreams come true. 2 scoops PB Chocolate + 1 scoop Rocky Road with a GF waffle cone to top it off 🤤
Besides the ice cream of my dreams, I've also had some real goods eats and lots of laughs with @kaileeinthekitchen and @themindfulhapa . Staying in an Airbnb and enjoying all the food and sites with these two makes my heart happy. It feels like a trip with my two big sisters (that I never had 😂) .

✅ Melt 1 cup of our new dark chocolate Hu Paleo | Vegan Gems
✅ Spread the melted chocolate along the side and bottom of cupcake liners then refrigerate until hard ✅ LOAD THEM UP with your choice of nut-butter, we used our house-made Almond Butter
✅ Place into the freezer for 5 minutes
✅ Top the cups with remainder of the chocolate and bake into the fridge for another 10 minutes.
✅ Demolish 👏them 👏all.

Yooooooo!! My peeps!!! Memorial Day Weekend is upon us!!! And I have got some treats for y’all!!! —
For cookies I’ll have the new”Blue Cream Dream” which is a creamy blueberry banana cookie with lots of dehydrated blueberries, crunchy banana chips, and decadent coconut butter. I’ll also have the “Awaken da Dulce Vida” which is creamy espresso, with Mexican vanilla, espresso beans, coconut butter, and chocolate chips. “Sacred Heart” which is local strawberries, hemp hearts, coconut butter, freeze dried strawberries and chocolate chips. “Happy Healer” local Spade and Clover Mother turmeric, chocolate chunks, cashews, coconut butter. And of course “The LifeChanging Choc Chip Chunk” which is the best chocolate chip cookie around that just happens to be vegan/gf/processed sugar free/soy free. And a limited supple “The LifeChangers” sista, “Holy Shift Batman” the sequel, which is a peanut butter chocolate chip Chunk Cookie now with more peanut butter and bigger chocolate chips. —
Does anybody remember “The Cookie of Abundance”?!!!? Well the flavors are back this week in a vegan cheesecake and the granola of the week! It’s Pineapple/Ginger from @spadeandclover/Coconut/Cashew with a Cherry on top!! Then this flavor 🙌 it’s a blueberry vanilla bean with beautiful super ripe peaches I got from my market neighbors at Schuler Peach Farm with a coconut cookie crust with coconut butter 🤤. Then I’ll have the previously post about flavors of the Peaches & Cream with the pecan flour from @caryapecanmilk cookies and crust and this also the Keto mock cookies and cream with the pecan flour cookie crust. And as always, vegan cheesecakes will most likely sell out!! —
For Granola of the Week I’ll have the “Granola of Abundance” which is super chunky with pineapple, cashew, cherries, toasted coconut and crystallized ginger. I’ll also have lots of bags of my OG Super Seedy!! —

These have just the right amount of sweetness to make them a treat and all whole grain sourdough to nourish your body. Perfect anytime but especially awesome if you can tuck yourself away in a cozy corner for afternoon tea and a grown up book🥰a girls gotta dream right?
-Recipe for 24 muffins:
-Sourdough Whole Grain Lemon Poppy Seed Muffins.(Vegan)
-3T ground flax seeds - 9T water
-1 packed C natural brown sugar
-444 grams discard or fresh starter(2 C)
-330g whole wheat bread flour(3 /2 C)
-222g almond or other dairy free milk(1 C)
-111g olive oil(3/4 C) -1T baking powder
-1tsp baking soda
-3/4tsp sea salt
-1tsp pure vanilla extract
- 1 1/4 tsp pure lemon extract
-3/4 poppy seeds
-ingredients for crumb topping
Combine with fork in a bowl and set aside:
1C oat flour
1/2 C brown sugar
1/8tsp sea salt
1/4 C +3T olive oil
1/3 tsp lemon extract
—————————————————preheat oven to 350
-grease or line muffin cups
-Mix flax seeds and water in small bowl
-in large bowl fully combine starter, almond milk, olive oil,vanilla,lemon extract
-in separate bowl fully combine flour with baking powder, poppy seeds,baking soda,and salt.
-Stir flax into starter mix then stir in flour mixture until everything is thoroughly mixed.
-Put in muffin tins and gently press a spoonful of crumb topping onto each top.
-Bake 12 minutes , rotate pan and bake another 12-16 minutes. Until the top of muffin rises back after gently pressed with a finger. Allow to cool in pan for 15 minutes then remove from pans andcool on wire rack.. eatemup🤗 -

Recipe: Double Choc, Oat and Raspberry Smoothies
Kick start your morning with rich and creamy smoothie that you can have on the go!
If you’re adding oats to a smoothie, please at least soak them overnight first (in an acidic medium, like filtered water and lemon juice). Even better, soak and then cook the oats- and add the cooled porridge to your smoothie! Why? Consuming raw oats (or any grains) means that you’re 1) consuming anti-nutrients that are inflammatory and 2) you’re drastically reducing absorption of minerals from your food, because of said anti-nutrients. Fun tip for you, because it’s one we overlook too much. •
In a blender, blitz until smooth; 2 ripe bananas, 1/2 cup frozen raspberries, 1/2 cup presoaked oats (soak the night before, preferably cooked + cooled), 1/2 tsp cinnamon, 2 Tbsp cacao powder, 2 Medjool dates (pitted), 1 Tbsp nut butter (optional) and plant milk of choice! We served this in a jar with extra warmed berries, vegan chocolate fudge sauce and fresh raspberries
Super easy and delicious vegan cake 🍰😋❤️

I’m in Boston! I’m visiting my sister with my mom for two days and my sister is taking me to all the best vegan spots ☺️ Last night I tried @pressedjuicery for the first time and I was definitely impressed! The ingredients are great (water, dates, cacao, almonds and sea salt for the chocolate!) and it was really good! Also I apologize for the erratic post schedule I’m just getting my bearings at home and not holding myself to as strict a standard. But I’ll be getting back to normal soon I just needed this little break! 💕
