Crispy potatoes and mushrooms with avocado by @miss_gruenkern 💛 Recipe:⠀
1½ lb yellow or red baby potatoes⠀
olive oil (just enough to coat)⠀
large pinch of ground black pepper⠀
¼ tsp salt⠀
½ tsp dried oregano⠀
½ tsp lemon juice⠀
1 tsp dried thyme⠀
2 cloves garlic, minced⠀
Preheat oven to 425°F.⠀
Wash potatoes and cut into halves.⠀
Place in a bowl, toss with salt, thyme, garlic, lemon juice, oregano and pepper.⠀
Bake for 25 minutes on a baking sheet lined with parchment paper.⠀
Remove from oven, rearrange potatoes and bake for another 5-10 minutes, until they're golden brown and crisp.⠀
2 pounds (900g) button or cremini mushrooms, washed, trimmed, and quartered⠀
1/4 cup (60ml) extra-virgin olive oil⠀
Kosher salt and freshly ground black pepper⠀
8 to 12 sprigs thyme or rosemary⠀
2 tablespoons chopped parsley, chives, tarragon, or other fresh herbs⠀
1. Adjust oven rack to center position and preheat oven to 375°F. Toss mushrooms with olive oil and season with salt and pepper. Transfer to a foil-lined rimmed baking sheet and spread into an even layer. Spread thyme or rosemary sprigs on top of mushrooms. Transfer to oven and roast until mushrooms release liquid, about 15 minutes.⠀
2. Return mushrooms to oven and continue roasting until browned but still tender, about 30 minutes longer. Discard thyme or rosemary. Transfer to a bowl and toss with parsley, chives, or tarragon. Serve immediately. Enjoy!

Onigirazu Sushi Sandwiches by @clean_body_ 💛 Recipe:
makes 6 halves⠀
200 g mochi rice ⠀
1-2 tbsp lemon juice ⠀
2 tbsp tamari sauce ⠀
avocado, cut into thin slices ⠀
carrot, sliced thin ⠀
red cabbage, thinly sliced a⠀
125 g tofu ⠀
coconut oil ⠀
2 tsp coconut sugar ⠀
1-2 tbsp tamari sauce ⠀
3 nori sheets ⠀
How To Make:⠀
1.) cook rice according to the information on the package ⠀
2.) add lemon juice and tamari sauce. Mix well and let it cool down.⠀
3.) meanwhile cut veggies & avocado and prepare the tofu:⠀
Cut tofu into 1 cm slices. Heat some coconut oil in a nonstick pan. Fry tofu till it gets brown. Turn down the heat and add in tamari sauce and some coconut sugar. Let it caramelise for a moment. ⠀
4.) place 1-2 tbsp of rice in the shape of a square in the middle of the nori (shiny side facing downwards) so that the corners of this „rice square“ point towards the center points of the nori sheet’s lengths.⠀
NOT CORNER TO CORNER but the opposite :) ⠀
5.) place some veggies, avocado & 2 slices of tofu on the rice and top with some more rice.⠀
6.) fold corners of the nori sheet into the center like an envelope ✉️ to create a square. Put it seam side down and let it sit for a moment. ⠀
7.) cut into halves using a sharp knife.⠀

I don’t know why I had to be over 30 y/o befors learning this trick to have fresh ready to eat carrots. But it’s completely new to me and I’m just passing my new knowledge forward😉
And yes you can probably buy them pre-peeled and washed. But If you’re re like me who likes to eat carrots but are to lazy in the moment to actually wash/peel the carrot. Just peel a bunch of them and put in a clean jar filled with water in the fridge😱🙌🏼🌱

Quibe de Abóbora Recheado com Couve 🌿
↘Para a massa↙
✉600 g de abóbora japonesa descascada e cortada em cubos
✉2 xícaras (chá) de trigo para quibe já hidratado em água quente
✉1/2 cebola bem picada
✉1 dente de alho espremido ou bem picado
✉1/2 xícara (chá) de cheiro-verde picado
✉1 punhado de manjericão picado
✉1 punhado de hortelã picada
✉1 colher (café) de pimenta síria
✉1 pitada generosa de cominho em pó
✉2 colheres (sopa) de azeite de oliva
✉1 colher (café) de sal
↘Para o recheio↙
✉200 g de couve-manteiga cortada bem fininhas
✉2 dentes de alho espremidos
✉1 fio de azeite de oliva
✉Sal a gosto
✉Cozinhe ou asse os cubos de abóbora até que fiquem bem macios (se cozinhar deixe por alguns minutos a abóbora já cozida sobre um escorredor para drenar o máximo de água dela). Amasse a abóbora já cozida e reserve. Aqueça uma frigideira, coloque nela um fio de azeite e refogue brevemente o alho, em seguida junte a couve, adicione sal e mexa. ✉Tampe e deixe murchar por uns 2 minutos, desligue e deixe esfriar.
✉Numa tigela coloque o trigo já hidratado e todos os temperos e misture bem. Por fim junte a abóbora amassada e torne a misturar novamente até que esteja totalmente incorporado e obter uma massa bem homogênea. Pegue porções da massa e abra um pequeno círculo, coloque um pouquinho da couve refogada dentro e feche moldando em formato de quibe. Repita esta operação com toda a massa e a couve restante.
✉Preaqueça o forno a 200ºC por 10 minutos. Unte uma assadeira com azeite, coloque os quibes nela, pincele mais azeite sobre cada um deles (só um pouquinho para dourar) e leve ao forno por aproximadamente 30 minutos (fique de olho, pois o tempo pode variar e sirva em seguida. Fica ótimo com molho apimentado de tahine.

What do poor vegans eat? How much does a meal cost for a vegan? How colourful is your plate? How long does it take your to prep your delicious dinner!
For me.... maximum 10 minutes... loaded with veggies... loaded with savoury flavours.... powered with plant based protein and for 2 people it costs $3 CAD dollars to eat this way!

Ich war noch nie Fan der „gut bürgerlichen Küche“ 😬 stattdessen liebe ich exotisches Essen aus aller Welt! 🌎🌍🌏 Bevor ich mich #vegan ernährt habe war die Angst auch in mir „aber dann kann ich ja gar nichts essen und habe tausend Regeln“ 🤯 vollkommen unbegründete Angst, denn die einzige Regel, die es gibt, iss nichts was vom Tier kommt. That’s it. Nicht sonderlich schwer. Wenn man aber nicht weiß, wie Burger & Schnitzel auf den Teller kommen oder denkt es wäre okay Kühe immerzu zu schwängern, um Ihnen danach das Baby wegzunehmen und die guuuute, ach so gesunde Milch zu Quark oder Käse zu verarbeiten, ja DANN! dann ist #veganleben auch nur Gewöhnungssache 😜🤷🏽♀️

350g Kichererbsenmehl, 2,5TL Johannisbrotkernmehl, 100g Kokosöl (alles von @govindanatur )
& 250ml Gemüsebrühe zu einem Teig verarbeiten. Teig ausrollen und mit einer Schale, große Kreise ausschneiden.
für die Füllung...
1 Paprika, 1x halbe Zwiebel, 5-6 Scheiben Chedda von @beddaworld , Chili &
1x Packung #Jackfruit gehackt von @govindanatur vermischen.
Bei der Zubereitung dann einfach 1-2EL der Füllung auf den ausgeschnitten Kreis legen. Die eine Hälfte auf die andere klappen & mit der Gabel die Enden zusammendrücken. Danach geht’s ab in den Backofen bis sie goldbraun sind 💛🧡❤️ #foxyliciousfood
Vegan Cream Cheese & Scallion Wontons by @comfortfoodvegan 💛 Recipe:
8 oz container vegan chive and onion cream cheese⠀
1/4 cup scallions, sliced thinly⠀
1/2 tsp garlic powder⠀
Package of vegan wonton wrappers⠀
Sweet and Sour Sauce for dipping⠀
1) Scoop the cream cheese out of the container and into a bowl. Allow it to come to room temp a bit and mix in the garlic powder. Grab a small bowl and fill with water. you will use this water to seal the edges of the wonton wrappers.⠀
2) Lay out 6 wonton wrappers at a time and cover the rest with a towel so they don't dry out. Take approx 1.5 tsp of the cream cheese filling and put it right in the center of each wrapper. Dip your finger in the water and trace the outermost edge of each wrapper, getting it wet. Then seal the edge by taking the two opposite sides together. then take the longest straight edge and overlapped the corners, getting more water on those edges to seal. Continue until you've used up all your cheese filling.⠀
3) Heat up your choice of oil and once hot, depending on your pan size drop as many as your pan will allow. Each wonton takes 45-60 seconds. When fried, place on a towel so it soak up excess oil.⠀
4) Keep them covered in the fridge and they'll last (minus a little crunch) for about 4 days. Enjoy!
No meat, no beans, no tofu, no soya in SIGHT but 40g of protons?! SAY WHAT? (not hating on soya btw I love those beany boys) BUT this meat alternative that I paired with peas, red onion, other veg and hoisin sauce was made from PEAS THATS RIGHT PEAS. What a world we live in eh? Sainsbury’s 👍🏼 Also fat noodles cause why have skinny noodles when you can have fat noodles?
