Silken tofu: 1 block smashed
Cauliflower: ½ head grated
Capsicum: 1 finely chopped
Parsley: ½ C finely chopped
Nutritional yeast: ½ C
Flour: 1 T
Cornflakes: ½ C roughly crushed
Cajun spice: 2 T
Smoked salt: 2 t
For coating:
Cornflakes: 1 C roughly crushed
Smoked salt: 1 t
Olive oil for shallow frying

Method:
1) Mix all the listed ingredients in a bowl to make burgers.
2) In a separate bowl mix the coating ingredients
3) Make a golf sized ball with the burger mix. Roll in the coating mixture and flatten into burgers. The mixture should make 8-9 burgers.
4) Refrigerate burgers for 1 hr to firm up.
5) Shallow fry in hot olive oil on medium heat, alternately you can brown the outsides in olive oil and finish cooking in a preheated oven at 180C for 20 minutes.

  • 🍄😍 Miso Glazed Mushrooms! 📷 by @earthofmariaa 🚨🚨Recipe: 14 oz button mushrooms 
1 medium onion chopped
1/3 cup tamari
2 tsp miso paste
2 tbsp apple cider vinegar
2 tbsp maple syrup
2 tbsp water
1 tsp arrowroot powder

Instructions
Start by boiling the mushrooms in a saucepan until fully softened. How long this takes depends on the size of the mushrooms, but usually takes 5-10 minutes. To test, take one out with a wooden spoon, wait for it to cool down and then test with a knife or a toothpick.
Add the onion to a non-stick frying pan and cook for 2-3 minutes, until softened.
Meanwhile, prepare the glaze my stirring together the tamari, miso paste, apple cider vinegar, maple syrup and water.
Drain and rinse the mushrooms, and add to the frying pan, stirring for a minute to reheat and brown.
Pour in the glaze together with arrowroot powder. Cook for 2-3 minutes over a medium heat, stirring, until the glaze thickens. ** Tag a friend in the comments who’d love this! 💛

INGREDIENTS 
Wrappers
3 cups all-purpose flour
pinch of salt
1 cup boiling water
1 tbsp cold water
Filling
2 tbsp avocado oil or other cooking oil
2 tbsp ginger, minced
1 medium onion, chopped
3 cups shiitake mushrooms, chopped
2 cups finely shredded cabbage
1 1/2 cups finely shredded carrot
4 (around 1 cup) scallions, finely chopped, both white and green parts
1 tbsp sesame oil
3 tbsp Shaoxing wine or rice wine
2 tbsp soy sauce
1 tsp sugar
1/2 tsp white pepper
1 tsp salt, or to taste
INSTRUCTIONS
To make dough: combine the flour and salt together in a medium bowl. Make a well in the center, and gradually add the boiling water, stirring with a spoon until the mixture forms clumps. Cover and let rest for five minutes. Add 1 tbsp cold water and knead into a ball, then cover and let rest as you prepare the filling.
To make filling: heat oil in a large work or skillet over medium high heat and stir-fry ginger and onions until translucent. Add in chopped mushrooms and stir-fry for another 3-5 minutes until liquid is evaporated, then add cabbage and carrots and stir-fry for 3-4 minutes, until most of the liquid from the vegetables is released. Add chives, wine, soy sauce, sugar, white pepper, and salt, and cook one more minute, then remove from heat. Taste and add more salt or sesame oil as necessary (you want the filling to be quite salty/well-seasoned, as the flavor mellows in the dumplings). Place filling in the fridge to cool.
To make the dumplings, divide the dough into two portions, and knead well. Roll each portion into a 1 inch rope, and cut into small tablespoon-sized pieces, flattening each piece with the palm of your hand. Dust the working surface with flour and roll each piece out into a flat disc. Add a generous amount of filling and pleat the edges, pinching tightly to seal.

  • ONE-POT SPAGHETTI WITH ROASTED CAULIFLOWER by @yummyyatra 🧡 ⠀

Ingredients for the roasted cauliflower ⠀
1 whole cauliflower head⠀
1 tbsp olive oil ⠀
Salt and pepper, to taste⠀
2 tbsp dried basil ⠀
1 tsp cashew parmesan⠀
1 tbsp lemon juice⠀
⠀
INSTRUCTIONS⠀
1. Cut the cauliflower into florets, wash them thoroughly⠀
2. Heat a cast iron skillet & add 1 tbsp olive oil ⠀
3. Add the cauliflower to the skillet, sprinkle some salt, pepper, dried basil leaves, cashew parmesan on the cauliflower ⠀
4. Sprinkle some water on the cauliflower, cover, cook on medium-high for about 3-4 min or until golden-brown ⠀
5. Uncover and flip the florets to cook further, cover, cook again until golden-brown. Make sure the cauliflower stems are cooked through & charred but still holding their shape. This whole process takes about 20-25 min⠀
6. Once the cauliflower florets are done cooking, turn off heat & drizzle 1 tbsp fresh lemon juice over them. Transfer to a bowl & set aside for use later. ⠀
For the pasta:⠀
1 lb dry pasta ⠀
4 cups water⠀
1 lb ripe tomatoes, chopped ⠀
1 large leek, trimmed, the white & pale green part diced⠀
7 cloves garlic⠀
1 tsp red pepper flakes (more or less, according to taste)⠀
2 tsp olive oil⠀
Salt, pepper, to taste⠀
1/2 cup fresh basil⠀
1 tbsp cashew parmesan ⠀
INSTRUCTIONS⠀
1. Combine spaghetti, tomatoes, diced leek, water, crushed garlic, red-pepper flakes, olive oil, some salt, & water in a large pot⠀
2. Bring to a boil over high heat, stirring & turning pasta frequently until it is al dente/water has nearly evaporated. Turn off heat ⠀
3. Season to taste with salt, pepper & add cashew parmesan & fresh torn basil⠀
4. Divide pasta into serving bowls, top with roasted cauliflower.⠀

Mash the banana as well and stir both in your oats and milk with the maple syrup, peanut butter, cocoa powder, and cinnamon until mixed well. Place in the refrigerator for at least a few hours, or overnight. Top with peanuts and dairy-free chocolate chips.

The answer is no 😅 People are generally concerned about soy because they hear it contains these estrogens, that surely must make your boobs grow (let me tell you gents, if this was true, girls around the world would be living on tofu 😂).

The critical thing to understand, is that estrogen from plants (phytoestrogens) and estrogen from animal/humans (mammalian estrogens) are similar, but not identical in structure. This is actually beneficial because phytoestrogens bind to estrogen receptors in the human body, but do not activate those receptors (i.e. they don’t cause the cells to undergo changes that mammalian estrogen would induce, such as bigger boobs, increased abdominal adiposity, decreased muscle mass, decreased libido etc).

In contrast, the estrogen found in animal products, like milk and meat, DO stimulate these receptors in the same way that our own estrogen does. And excessive stimulation of these receptors has been linked to an increased risk of breast cancer (in men and women!).

So don’t be afraid to be a soy boy 😜💪🏼🏋️

  • САМАЯ ПРОСТАЯ И ЭФФЕКТИВНАЯ МАСКА ДЛЯ ЛИЦА СО СПИРУЛИНОЙ!

Небольшое количество порошка необходимо развести с кипяченой водой до получения однородной сметанообразной массы. Некоторых в этом случае может отпугнуть своеобразный запах и цвет, однако не стоит беспокоиться: спирулина не красит кожу и не оставляет на ней никаких ароматов. Полученную смесь нужно нанести на лицо (исключая чувствительную область вокруг глаз) и подождать 15-20 минут до полного высыхания. Смывается она простой водой.

Действие спирулины имеет накопительный эффект. Поэтому делать маски рекомендуется курсом в 10 процедур в течение 2 недель. Среди положительных эффектов прежде всего отмечают:
✅Уменьшение воспалительных процессов;
✅Очищение кожи от лишнего жира;
✅Исчезновение прыщей и черных точек;
✅Хороший цвет лица;
✅Разглаживание небольших мимических морщин.

Teacher: Now, cut the yam and sweet potato into small cubes ya. 
Me: Okay. *began to chop vigorously, almost going to mince them*
Teacher: Eh, stop stop stop! Too small already la.
Me: Oh no 😬

When it was done and we cut a slice of it.
Teacher: The yam and sweet potato cube are suppose to look like gems 💎 in the cake (refer to the last photo). Where’s my 💎 ?

Despite my mistake, this yam mousse cake still taste so yummy 🤤 Thanks to the recipe 🙈I like the jelly-like consistency of the mousse and its light texture that comes from the vegan meringue. There’s a mild cocoa flavour that comes from the cocoa butter we used. It was sweetened just enough and perfect for a cup of tea.

This is my favourite cake among all the cakes I have made with teacher Melinda 💕😌

Finally I have posted all of the pastry and cake photos. It was a fulfilling learning experience. I look forward to learn from teacher Melinda again 😄
