Pasta Bake🙌🏼 made vegan/dairy free with @mylifebio pizza shred! I love using the pizza shred biocheese for pasta bakes and lasagnes as I find it melts that little bit better, and you get that cheesey stretch🧀Some other tips to get it melty and to not dry out is to bake it first, then top with biocheese and pop it back in the oven with the heat turned off or right down. Also to push it a little into the top layer of white sauce or layer it underneath toppings (especially good when making pizza!). Just a few of my favourite tips with vegan cheese🌱🧀
1 onion, chopped
3 cloves of garlic, minced
2 tbsp olive oil
1 400g tin chopped tomatoes
700g jar tomato passata
Mixed handful of basil, parsley, oregano, rosemary, finely chopped
1/2 cup water
2 tsp sea salt
2 tsp coconut sugar
pepper, to taste
In a large saucepan cook the onion and garlic until translucent. Add the rest of the ingredients and let simmer, stirring occasionally, covered with a lid left slightly ajar. Let cook for around 20-30 minutes, the longer the better as the flavours will develop.
500g penne pasta or pasta of choice, cooked according to package directions
Preheat the oven to 180C.
Add the cooked pasta into the sauce and mix to combine. Transfer into an oven safe dish and set aside while you make the white sauce.
2 tbsp vegan butter
2 tbsp white flour
1 1/2 cups soy milk
1 tsp sea salt
black pepper, to taste
1 tbsp nutritional yeast, optional
Heaped 1/2 cup @mylifebio cheddar or pizza shred
Melt the butter in a saucepan over low-medium heat. Using a whisk, add the flour and mix to combine. Let cook for 30 seconds or so. Slowly add in the soy milk, stirring constantly. Next add the salt, pepper, nutritional yeast and cheese and stir until the cheese has melted though. Pour evenly over the pasta bake and spread out. Top with extra biocheese and bake for 20-25 minutes until golden! Enjoy!

Starting off my summer break with oats topped with banana, apple butter from the @ithacafarmersmarket , the last of my @artisanaorganics cashew butter and a whole lotta flaxseed (like triple what’s on the bowl in this picture because aesthetics) I’m so excited to be back and have more time to spend on my photography and develop some recipes! Just gutted I didn't get a chance to eat there more and try some more of their lovely treats.
This donut was so so so good though.
Butternut squash and sweet potato pitta w/ caramelised onion chutney (make sure you ask to remove the mayo and either add onion chutney or chilli jam instead). I grabbed a quarter avocado on the side for my garlic bread.. don’t knock it till you’ve tried it! Spicy rice was made vegan as in January this year too.. just sayin’

It's been a week since I reluctantly walked away from hell.
Sky the piglet was found dying on the floor, along with multiple other tiny babies suffering until their last breaths.
I gently picked her up to try and provide her with some comfort from the concrete floor.
Her cries were different, I'd never heard a pig make a sound like it. Her cries will never leave me.
Helplessly I watched her suffer. I've never felt so useless in my entire life.
Her memory lives on thanks to the animal rights movement. This documented moment of complete despair has been shared thousands of times across the world. Thank you and please keep sharing Sky and the footage of the action. ( On my highlights and hashtag #meatthevictimsbcn )
I think of Sky, her siblings and her mother every day.
Her mum was obviously emotionally exhausted, it was almost like we cried together at one point.
It occurred to me today that she too will be eaten by someone. The fact I cannot stop her and all the others being murdered is shameful. We have so much to answer for.
Can you imagine what is must be like for them, day in and day out, minute by minute? Trapped and deprived of everything, yet guilty of NOTHING.
I don't want sympathy, I want action. I want people to see what I see, feel what we feel. Know that by paying and eating animal products you are PRO ANIMAL ABUSE AND VIOLENCE. If Sky was a puppy they'd be public outcry. Ask yourself what is the difference here.
