we have been teaching him more and more every day what being vegan is all about and he’s starting to understand parts of it, and has even started to ask “this is vegan??” when he sees something he wants at the store 💗 if it isn’t vegan, I will just find a similar replacement and he’s always happy.
Today I was looking at the hummus, which was right beside some cow cheese that had a drawing of a cow on the front. He said “look mummy! a cow!” and I said “yes! A cow! there’s a cow on it because that’s cows cheese.” And he said “I don’t eat cows cheese. Im vegan and that cheese is for the cows so I don’t eat it.” 😂

  • NEW RECIPE 😋 Vegan Raspberry and Macadamia Muffins (also refined sugar free) I loved them and ate quite a few on our drive to Sydney last week 🙊🤪 These would made great school lunchbox snacks if you leave the nuts out and use a nut-free plant milk ✌🏻☺️And you could easily swap raspberries for other berries 🍓. I hope you will enjoy this recipe. Make sure to save it! ☺️ (this recipe is not GF but buckwheat flour might work as a substitute.) Vegan Raspberry Macadamia Muffins 
Makes 12 
2 cups of self raising flour 
3/4 cup of coconut sugar 
1/2 cup of melted coconut oil
1 tbsp of flax meal 
1 tsp of cinnamon
1 cup of plantbased milk of choice 
1 cup of raspberries frozen + extra to top
1/2 cup of chopped macadamia nuts or swap for sunflower seeds or walnuts 
1. Preheat your oven to 180 degrees Celsius and line a muffin tray with muffin cases.
2. In a bowl combine the flour, coconut sugar, flax meal and cinnamon together. Pour the melted coconut oil and combine then add in the plant based milk and combine with a spatula. 
3. Fold the raspberries in gently with a spatula.
4. Spoon a few spoonfuls of the mixture in your muffin cases then top with extra raspberries and the chopped macadamia nuts. 
5. Cook for 25 minute at 180 degrees Celsius.

  • I often get nervous when I see my Kiddos on the thinner size, because I am used to having husky kids. Then we go to get our check-ups & the doctor reminds me that because they dont get the hormones that are in meat and dairy they're going to be on the Slender side and that they are perfectly healthy vegan kids.💚 It's nice to be reassured that I'm doing the right thing.

  • Making those protein popsicle gains! Well, I was until Mia came and ate it and stole all my gains! 😩😂 These were super simple to make. I blended some frozen banana, frozen blueberries, peanut butter, and pea protein powder. Then I put them in popsicle molds and stuck them in the freezer.💪

  • What if you woke up tomorrow with only the things you thanked God for tonight? What blessings big and small have you forgotten about that you’re grateful for? What a beautiful day today was! (can see in my stories😍)The sun, the wind, the weather. The day was perfect 😭 and so was all the fruit 😋🎉 Soooooo grateful to God for EVERYTHING, even the small, often overlooked, day to day things.❤️🕊🙏 I thank Him for HIM, another day of life, breath in my body, a sound mind (hasn’t been so, for a little while) family, friends, love, peace, hope, the sunshine today along with bright blue skies, white fluffy clouds, the amazing wind blowing that felt so good on my skin...the tasty fruit 🍉 🍊🍌🍇🍓🥭. OHHH, gratitude truly does change the attitude! Practice it DAILY and you’ll feel high on life again. 🎉Appreciate all the good while it lasts because sadly, it doesn’t.🕊❤️.   • So many people ask me how they can make more environmentally friendly choices and really it is easier than you think. I'm not a make up or hair kind of girl, I'm more of a 'set and forget' kinda girl so my 'bag' contains stuff like this. Each day I will have a bag which generally contains two other bags, two for when we find food goodies (too many times this happens 🙈) and we need to transport them home. The produce bags so we can take our produce home without adding to the plastic problem! Normally a bamboo or metal straw for if I buy the boys a smoothie out,  I won't take their plastic or even paper ones and two cups, one to carry our water and one for a cheeky chai stop 🤗 and the 3rd bag you ask? That is the most important bag of all...that is so we can collect litter we find on our travels,  you'll be surprised how much you find each day and it is such a rewarding part of our day to day. It's also a great habit to get into as people will stop to see what you are doing or some will ask and you never know who will start the practice each day too #sustainability #healthyhabits #dailypractice #environmentallyfriendly #lowwaste #doingourbest #cleanerfuture #green #vegan #veganfamily #vegankids #veganmum #plantbased #changingthefuture

  • FYI if you ever go out to eat Mexican with @jason_krueger2019 , expect him to order a refried bean chimichanga. Don’t try to talk him out of it. It all starts with him looking through the menu to make sure it’s a possibility. Next, a conversation with the server to make sure it can be done. Then, if the stars align and the moon is adjacent to mars, Nash will get said chimichanga, which he will then proceed to eat half of, ask for a to go box, and then bring home only to eat the other half 30 minutes later🤔

Last night, however, we decided it could easily be made at home. So, we bought the largest tortilla, a can of refried beans, and guac and Nash proceeded to deep fry this massive chimichanga🌯(this is a burrito)

It’s literally, Heat a ton of veg oil, cook some beans, wrap it in a large tortilla, and slowly lower it into the hot oil until it’s brown. EASY. oh yeah of course you can’t have anything Mexican without sour cream @tofuttibrands 🤘🏻🤘🏻

This granola is so nutrient dense and satiating, it is the perfect meal to start the day for all of the family. It is so hot right now in the UK, we are enjoying granola a lot more than warm porridge that's for sure. Me and Ellis doubled the ingredients and made a big batch of this delicious granola today to last us for the next few days, so here is the recipe:

Ingredients:
-250g rolled oats
-100g pumpkin seeds
-100g sunflower seeds
-100g walnuts
-100g raisins
-handful of brazil nuts
-80-100ml maple syrup
-pinch of salt(optional)
-1-2 tsp cinnamon powder
-1 tsp pure vanilla extract(optional)

Method:
1. Place the rolled oats and seeds into a large mixing bowl.
2. Roughly chop up the nuts and add to the mixing bowl and stir.
3. Add the cinammon, vanilla, salt if using and maple syrup to the bowl and combine well.
4. Spread out the mixture onto a baking tray lined with parchment paper or a silicone mat if you have one.
5. Bake in the oven for 20-25 minutes on 160°, stir the mixture around every 5 minutes to ensure nothing burns and everything is cooked evenly.
6. Leave to cool, then add the raisins and enjoy!

We ran out of maple syrup this time so we used half maple syrup and half date syrup, this tasted really delicious! We also switch up the types of nuts and seeds we use and often add things such as goji berries, dried banana chips and coconut flakes. Feel free to experiment as this recipe is very versatile. For those allergic to nuts you could opt out of adding them and add other varieties of seeds and dried fruits instead. I hope you enjoy as much as we do💚

Zach loves the Yorkshire puddings which made the hot oven slaving all worth it!! They had @lindamccartneyfoods sausages, @frysfamily soy country roast, Aunt Bessie’s roasties, cauliflower, pea, carrots, sweet corn & gravy😋😋😋

Here’s the vegan Yorkshire pudding recipe:
▫️75g plain flour
▫️75g chickpea flour
▫️2tsp baking powder
▫️1/4 tsp turmeric ▫️1/4 tsp Kala Namak salt (adds slight flavour of eggs to an egg-free dish)
▫️3/4 tsp apple cider vinegar ▫️6 tbsp aquafaba (the liquid in a can of chickpeas)
▫️360 mls water
▫️vegetable/sunflower oil for the pan

▫️Whisk the flours, salt, baking powder & turmeric together in a bowl
▫️Whisk the aquafaba, apple cider vinegar & water together in a jug and then pour into the dry ingredients and whisk all together until smooth
▫️Leave to stand for 10 mins or leave in fridge for few hours until ready to make.
▫️Put 1 tbsp oil into each well on the muffin pan and then put into a preheated oven at 220°C for 10 mins
▫️When smoking hot, remove from oven quickly and pour batter into each well and fill almost to the top
▫️Place back into oven for 30 mins
