3 Tbsp extra virgin olive oil
3 Tbsp lemon juice from 1 large lemon
1 garlic clove pressed or minced
1/2 tsp sea salt or to taste
1/8 tsp black pepper
1 1/2 cups cherry tomatoes halved
1 English Cucumber halved and sliced
15 oz chickpeas or garbanzo beans, drained, rinsed
1/2 medium red onion thinly sliced
1 avocado sliced
1/4 cup cilantro chopped
4 oz feta cheese diced

This Vegetarian Tortellini Soup is flipping AMAZING! 🍲🍅🌱 And perfect for crazy weeknights too! 🤪👍🏻 The recipe features a flavorful broth made from crushed fire roasted tomatoes and vegetable stock and each bowl is packed with tasty veggies like onion, carrots, and spinach. To take things to the next level, I’ve seasoned it with garlic, thyme, basil and oregano, plus an optional dusting of grated parmesan cheese on top. Amidst all this awesomeness are tasty three-cheese tortellini, which take this soup to next-level greatness.
I had a bit of a frittata mishap over here 😬🤷🏻♀️, but it turned into a delicious broccoli, tomato, red onion, and feta scramble, so it’s a win in my book 💁🏻♀️ I served it with some roasted sweet and russet potatoes and fresh avocado slices, and now this morning is looking GOOD 😍 Hope you all have a great Tuesday!

Beef and Vegetables
Small steak (I used organic ribeye) marinated in soy sauce, fresh garlic, ginger and a bit of chili/garlic paste. Grill the steak. Lightly saute veggies (I like my veggies to still have a bit of crunch). Carrot, squash, 3 cloves of garlic and red bell pepper. While the veggies are sauteing steam the broccoli for 2 minutes. Add broccoli, sliced steak and green beans. Add sauce to pan. Serve over rice with fresh lime. For a sauce I used soy sauce, fresh ginger, chili paste and cornstarch. Soy sauce or liquid aminos would also be really good if you didn't want to do the sauce. I would also add fresh cilantro and basil...I was out.

For the past 5 weeks I have been exploring different alternatives to my favorite foods. Pasta is a favorite in my family! I was excited to try Banza pasta today and my family and I loved it!!
This pasta is made from 90% chickpeas, is naturally gluten free, 23g protein and 8g of fiber 😀
I made a veggie stir fry with some lean turkey!
Details- cooked 1 box of Banza Pasta. Stir fry 1/2lb turkey. Add favorite veggies- 2 carrots, 1/4 purple onion, 1 green bell pepper, 1 small head of broccoli and 1 chopped garlic clove. I added 1 can of diced tomatoes and 1/4 cup of veggie broth. Cook until veggies are softened and turkey cooked! I seasoned with salt, pepper, lemon pepper and a little curry. As the pasta cooks it gets really frothy. At the end we rinsed our pasta and then I added a spoonful of organic butter. Mix together a enjoy!!
