  • Peppered mushroom stew & Jollof rice

100% vegan 100% FLAVA

RECIPE BELOW ⬇️⬇️⬇️
Ingredients 
450g mushrooms 
1 tsp sea salt 
1 tsp All purpose seasoning 
1 tsp chilli 
1tsp dried Herbs/parsley

Peppered sauce Sauce 
125g fresh tomatoes/ 400g chopped tomatoes 
200ml coconut milk 
2 tbsp a Tomato purée 
1 tsp black pepper 
2 scotch bonnet / chillies de-seed for less spice 
4 garlic cloves

Jollof rice 
Sauce 
250g Fresh tomatoes 
6 garlic cloves 
2 scotch bonnet peppers 
4 sprigs of fresh thyme 
1 spring onion
Likkle fresh ginger 
Likkle tomato purée 
1 medium onion
2 tbsp curry powder 
250ml vegetable stock 
1 large bell pepper halved de-seeded 
Salt to taste

1 medium onion
Few bay leaves
4 cups rice (basmati or long grain)
2 cups water
——— Method 
Wash mushrooms and slice them. Add seasonings then mix together in a bowl.

Add a likkle vegetable oil to your frying pan then add mushrooms and cook down until soft.

Now make yours peppered sauce by using a blender and adding all the above ingredients 
Now add your sauce to your mushrooms and cook until thick.

Now for the jollof rice.

Use your blender again and add all ingredients for jollof rice sauce and blend until smooth.

Then use a large pot with some vegetable oil and cook down onions and garlic until soft.

Then add your sauce and cook down until smooth for around 10-15 mins. 
Add 4 cups of washed rice and mix together with sauce. Add some water to cover the rice then cook on a low heat for 30 mins.

Add water if necessary and then fork over when cooked.

Served family of 4-6 👨🏾‍🍳

What I love about Ghana so far....The FOOD. I've stuffed myself with Waakye, fried rice, jollof rice, fufu, gari, banku and Tofu. West Africans don't play when it comes to food. I eat with a glass of water next to me because of the pepper. Another thing..If a west African tells you a meal doesn't have pepper, please I beg you...don't believe it. 😂

Another thing I love is the fact that I can use my phone by a window seat without the fear of it getting snatched *side eyes Nairobi*
