Domaine des Comtes Lafon has the deepest and coldest cellars in Burgundy and they nurture some of the greatest dry white wines of Burgundy. Dominique Lafon is the leading producer in Meursault, producing wines of astonishing depth and complexity, yet supremely balanced as well. They do produce reds.
The domaine dates back to the building of the house and cellar at Clos de la Barre by the Boch family in 1869.
The red grapes are 100% destemmed and put in stainless steel tank with a cooling and heating system. Temperature reduced to 14° for a three to five day pre-fermentation maceration. The vats are typically punched down twice a day during fermentation. Post-fermentation maceration depends on the tannins, while sometimes the juice is pressed and run off into barrel to finish fermenting there. 30% new oak is used. Maturation takes place over 18 months with two rackings before bottling without fining or filtration if possible.

I have a new appreciation for the high prices that Burgundy wines command. Example: the story of the vintner whose phone app alarm went off at 2 a.m. one recent morning because a spring frost was setting in and who had to go out immediately with his wife in the middle of the night by flashlight and light 750 candles in his fields in order to ward off the frost. #Volnay#wine is produced in the commune of Volnay in Côte de Beaune of #Burgundy , and in some #vineyards in the commune of #Meursault . The Appellation d'origine contrôlée (AOC) Volnay is only used for red wine with #pinotnoir as the main grape variety. There are no Grand Cru vineyards within Volnay, but several highly regarded Premier Cru vineyards. The AOC was created in 1937. In 2008, there were 206.7 hectares (511 acres) of vineyard surface was in production for Volnay wine at village and Premier Cru level, and 7,733 hectoliter of wine was produced, corresponding to just over 1 million bottles. The AOC regulations also allow up to 15% total of chardonnay, pinot blanc and pinot gris as accessory grapes in the red wines, but this not very often practiced. The allowed base yield is 40 hectoliter per hectare. The grapes must reach a maturity of at least 10.5% potential alcohol for village-level wine, and 11.0% for Premier Cru wine. The #style of Volnay wine is typically light and aromatic, and elegant rather than powerful, with considerably less tannin than the #Pommard wines from the neighboring village. ——————————————————————————————————
There are 29 climats within the Volnay AOC that are classified as #Premier Cru vineyards, which stretch in a wide band through the commune, located mid-slope and on both sides of the D973 road. Their wines are designated Volnay Premier Cru + vineyard name, or may be labelled just Volnay Premier Cru, in which case it is possible to blend wine from several Premier Cru vineyards within the AOC. In 2007, 132.68 hectares (327.9 acres) of the total Volnay vineyard surface consisted of Premier Cru vineyards. The annual production of Premier Cru wine, as a five-year average, is 4,756 hectoliter.The climats classified as Premiers Crus, and located within Volnay, are:

Heavy hitters flying in from NYC this week! Had the pleasure of trying both at a tasting event and had to grab a bottle each.
This Krug Grand Cuvée 167ème Édition iD 118002 is blended across 191 different wines made between 1995 and 2011. Cellared at the Krug estate for over 7 years, it finally received its cork in the winter of 2017-2018. With high spring temperatures followed by cold wet weather led to an unusually early harvest but resulted in exceptional structure and complex aromas. Final composition: 47% Pinot Noir, 36% Chardonnay, 17% Meunier.
Jacques D'Angerville has always made minimalist styles utilizing exceptional site selection and unique old vine clones up until his death on 2003. His son Guillaume continues this tradition today and his Volnay Fremiet 1er Cru provides lush strawberries and raspberries, perfumed blossoms, earthy wet leaves, with leather and wood notes. Grown next to the Pommard border this is one of the more feminine styles, with softer fruit and paler color but retains the same structure and minerality compared to his Champans vineyard. This also means less years in the cellar and earlier window for optimal drinking!

@markus_budai is in town so we went hard on Riesling with a lovely Volnay side kick of @domaine_michel_lafarge. @philipp.wittmann Morstein 09 still a young gun with lots of extract and power. Will be interesting to see it in five to ten years. The Volnay was minimalistic, pure and still wonderful fresh. A interpretation of Pinot I adore. Prüm 04 still so unbelievable young, reductive and hardcore on the sulphur 😜. 1990 from Schaefer just so relaxed, balanced with a strong acidity. And a 1993 Auslese from the legendary vineyard Berncastler Doctor. Complex, ripe and so damn deep. Doctor always needs a LOT of time but then nearly always develop in something special. Раз уж не спится с больной головой, покажу ещё одну красивую лаванду - Etoile d'Or Volnay. Обжигающую, со специями и сладкими цитрусами.
Очень неудобные флакон и коробка, а так бы поставила поближе и чаще носила.
