  • Durus Kura /Dum Durus~ famous Heirloom #Chicken dish from Chittagong or Chattogram a large port city in Bangladesh. In this dish a whole chicken is marinated with indigenous spices & slow cooked on Dum(In it’s own steam),finished off with a shower of beresta (thinly sliced onion deep fried to a golden hue). It’s served with a tradition Pulao / Pilaf

The ritual of goat sacrifice during Durga Puja was also performed in my maternal grandparents home. When I was a teenager that ritual was modified. A pumpkin or ash / wax Gourd was used instead as the sacrificial offering.

However on the day of Navami the consumption of non~vegetarian food continued. It was predominantly fish & goat meat.

On one Navami day the local butcher ran out of goat meat & the bawarchi realized that the amount of meat would not be sufficient to feed the total number of non vegetarian diners who would come to eat in my maternal grandparent’s home during Navami. In a frenzy he sent his assistant back home to ask my maternal grandmother what would be the next course of action. Those were the days when mobile phones were not around. So she asked them to buy whole chicken instead.

That was the first time Chicken was introduced to the Durga Puja feast at home. Durus Kura was cooked & everyone who ate remember that decadent dish to this day. 🌿
Both my co~grandmothers were best of friends. Both were born in the present day Bangladesh & shared the common love for good food.

Durus Kura was once cooked by my paternal grandma for my maternal grandparent’s when they were visiting us. The dish impressed my maternal grandma so much that she immediately jotted down the recipe of Durus Kura. 🌿
She had cooked it on special occasions & then on this Durga Puja Navami, she supervised the making of Durus Kura while the bawarchis cooked to her instructions.

  • Saz is one of newest entrant into #kolkata  and let me tell you I was really waiting for them to throw their doors open. I had been following them for quite sometime on their insta page. I was expecting a very diner like setup but they have classy yet quirky interiors

Their hassleback potatoes are to die for! What gets better than potato and cheese together...nuffin! They just mash everything up before serving and ooo mama! 
And it's the first time I tried cauliflower rice especially in a restaurant and it was yum. The avocado toast was decent and the ravioli compared to everything else was a little underwhelming. Their desserts are really good... I haven't had such nice tasting matcha dessert...let me explain...matcha needs to be whisked aka blended really well to not get the dusty gritty flavour of it...and lot of people don't do it properly so more often than not it doesn't taste good. But this was lovely...done right so you get the proper flavour of matcha sans dust. The banaoffee was a tad too sweet but the chocolate fondant is heaven on earth!

Definitely a great place to hang with friends or on a date. Highly recommend that you check them out

  • Palak Rice and Masala Soya Chunks for lunch 😃😊 Receipe of Masala Soya Chunks 
1) Soak soya chunks in hot water for about 10-15 minutes, drain the water and squeeze out excess water from the soya chunks and keep it aside.

2) Next heat oil in a pan, add cumin seeds let it splutter, next add one thinely sliced onion and fry it for few seconds, next add little sugar and fry the onions until it starts to change its colour. 
3) Next add grated garlic and ginger and one finely chopped green chili, fry it along with the onion for about 2-3 minutes.

4) Next add one medium size tomato thinely sliced, a pinch of salt and fry it until the tomato become soft and mushy.

5) Next add some thinely sliced capsicum, lower the flame and add dry spices like turmeric powder, corainder powder, red chilli powder, pav bhaji masala and salt to taste and fry it well, by adding little water time to time until the oil starts to come out from the sides of the pan. 
6) Next add the soya chunks and mix it well in a medium flame, add water as per your desired consistency, finely chopped coriander leaves and some crushed kasuri methi. Mix it well.
