My kind of plate: balsamic steak, grilled mushrooms, and roasted Brussels sprouts 🥩
This is one of my favorite quick marinades to throw together. Today I only soaked the steak and mushrooms in it for an hour or so after work and it was still so flavorful (though obviously the longer you can marinade, the better!):
- 1/3 cup oil of your choice (I used avocado)
- 1/3 cup balsamic vinegar
- 1 tsp minced garlic
- 1/2 tsp each of thyme, oregano, and onion powder
- salt and pepper

This bowl is my ride or die 😛 after eating this bowl I guarantee you will feel like a million dollars! Also it was so freakin easy to make! Whenever I cook veggies I also do the same combo of broccolini, zucchini, & sweet potato strips w/ lemon juice it’s so bomb!!! Also crispy chicken thighs are seriously my favorite protein right now they have so much flavor! I hope you guys have a great Saturday night💥

Chocolate test! Can you guess WHY the darker the chocolate is, the smaller its impact on blood glucose levels? 🍫🍫🍫 The answer is... Sugar! Yes you guys, if there is more pure cacao in the chocolate bar, there is less room for sugar in it 😂
I've found some super cool bars that are just cacao and butter - I'll try to dig them up.
In the meantime, if I'm going to eat chocolate I try to go for the darkest percentage I can enjoy (but nope, no way I'll eat 99%, I cannot deal 😬) It's small changes like picking a darker chocolate that add up and at the end of the day help you have much steadier glucose levels, which means less weight gain, lower risk of type 2 diabetes, heart disease, and Alzheimer's. Unicorn nice cream bars 🦄 🌈 💫 @realfoodology & I try to link up once a week & make some goodies 🤤🤤🤤🤤 & yesterday we made these magical squares - they’re sugar free & dairy free!
1 3/4 cup almond flour
1/2 cup arrowroot
1/4 coconut oil
1/4 cup Lakanto maple syrup
To make the crust preheat the oven to 350F.
Whisk together your almond flour, arrowroot and lakanto syrup, mix in a large bowl until combined.
Line a baking sheet with parchment paper, roll out your dough, flatten and bake for 15-20 mins. Allow to cool for 10 mins then put your crust in the freezer.
Blue majik filling:
1/2 cup of fresh lemon juice
2 TBSP of arrowroot
1 cup full fat coconut milk
1/2 cup Lakanto maple syrup
2 TBSP coconut oil
6 blue majik capsules poured out
1/2 tsp of vanilla or vanilla bean ..
In a medium pot, whisk your lemon juice and arrowroot until no lumps are left, then whisk in the rest of your ingredients.
Allow to completely cool before doing anything with it.
Dragon fruit topping:
1 cup raw cashews
1 cup of chopped dragon fruit
1/2 cup of coconut butter
1/4 cup Lakanto maple syrup
1 TBSP of lemon juice
1 TBSP lemon zest
1/2 tsp of vanilla ..
Add all ingredients to a blender & blend til smooth.
Remove your crust from the freezer and pour on top of the blue majik layer. Place back in the freezer for another 30-45min!
Once it’s hardened add your final layer of dragon fruit, allow to freeze for another 30-45 mins and then voila!

A 15 minute work night dinner you will be asking why you haven’t tried this combo sooner🤷🏻♀️. I shared with you all how easy it is to prep the scallops on my stories Sunday, if you missed it, you can find it under my highlight ‘weeknight meals.’
Dairy free hemp seed spinach cilantro pesto
1 cup basil
Handful of cilantro
Handful of spinach
2 garlic cloves
1/4 cup hemp seeds
1/4 cup olive oil
1/2 cup pine nuts
1 lemon juiced
Pinch of Celtic sea salt
Pulse everything in food processor and store in fridge.
6-8 wild caught scallops
1 tbsp @fourthandheart California garlic ghee
Salt + pepper
1. Heat your ghee in a cast iron skillet and get nice and hot
2. Add your scallops seasoned with salt + pepper
3. Add to pan and cook a few minutes not moving them during this time
4. Top with pesto
Instant pot cauliflower mash
1 head of cauliflower
1 cup water
1 tbsp @fourthandheart California garlic ghee
Salt + pepper
1. Add your trivet and water to instant pot
2. Add your cauliflower to trivet
3. Cover instant pot, seal valve and set to steam high pressure for 3 minutes
4. Quick release of pressure open, remove trivet
5. Strain water, add ghee, salt and pepper and with immersion blender blend.

Completed 1 week with no sugar! It took everything I had not to fall into the trap of buying discounted #chocolate#candy#dessert for the Easter Holiday.
Instead...I drank more water, ate watermelon when I had the urge for sweetness. And started moving more.
I would say this week went pretty well. Now its time to battle another week.

It’s safe to say that I love most any blend with a citrusy fragrance or a floral note, so I always have a bottle of lavender and either citrus fresh or lemon 🍋 nearby . I am also a big fan of peppermint 🍃 .

🥰𝓉𝑜𝓇𝓉𝒾𝓉𝒶𝓈 𝒹𝑒 𝒶𝓋𝑒𝓃𝒶 𝓈𝒾𝓃 𝑔𝓁𝓊𝓉𝑒𝓃❤️.
🍌2 plátanos de tamaño pequeño/medio.
🥞60 gramos de harina de avena sin gluten.
🌰leche de almendra o la que más os guste. 🥚1 huevo.
Machacamos los plátanos con un tenedor, echamos el resto de ingredientes y mezclamos (sin batidora!). Hacemos las tortitas y luego caramelizamos más plátano con un poquito de aceite de coco, y le echamos una cucharada de mantequilla de cacahuete. Servimos y a comer! 😜 .
. 🇬🇧𝒢𝓁𝓊𝓉𝑒𝓃 𝒻𝓇𝑒𝑒 𝑜𝒶𝓉 𝓅𝒶𝓃𝒸𝒶𝓀𝑒𝓈 😍 and caramelised banana with peanut butter. 🍌2 small/medium bananas.
🥞60 grams of gluten free oat flour.
🌰almond milk (or milk of choice) (half a glass).
Mash the bananas with a fork, and mix everything in a bowl, do not blend. Make pancakes. Then cut some more bananas and cook with a bit of coconut oil until golden brown, then add a tablespoon of peanut butter. Serve. Eat. 😜❤️.

THE DEETS ✨
In a high speed blender or food processor, add 4 medjool dates (soaked in warm water for 10mins) + 1/4 c coconut flour + 1 scoop @happywayau vanilla vegan protein (discount code: happymin) + 1/2 c natural peanut butter + pinch salt. Blend until dough mixture forms. Roll into small egg sized balls and set in freezer for approx. 15mins. Whilst eggs are setting, melt together 50g @lindt_australia 70% dark choc + 1-2 tsp @niulife coconut oil. Coat eggs in chocolate and sprinkle with sea salt. Freezer for another 30mins and ENJOY 😍 Store eggs in freezer 🙌

If you’re looking for permission, here it is... although you don’t need permission from me or anyone else! Part of being and eating healthy is having a healthy mindset around food. There are no “good” and “bad” foods. There are just choices. We can make informed choices about what we eat based on how it makes us feel, and that includes how nourished our body feels but it also includes eating for joy and how nourished our mind feels. If we restrict and binge, then end up feeling negative emotions towards ourselves and eating, then that restrictive mindset is not serving us. If we can enjoy things in moderation as part of a celebration or special occasion as a joyful act and then move on, that is a much more healthful approach.

Day 7: Today was haaaaaard. All I could think (and talk about) were hot cross buns and chocolate cakes and orange rose water tarts 😰 damn everyone for keeping them around the house...stayed strong today and had a kale and banana smoothie for breakfast along with scrambled eggs and salsa. Lunch was what is pictured above: roast pork carnitas (leftovers from last week). Was pretty hungry when I got in from work so I had an orange and some carrots with ranch dressing and almond butter as a snack. Dinner was a simple protein salad (again) and a big bowl of roasted sweet potato fries. I’m still feeling quite tired (as I’m ready to go to bed at 8 o’clock), but I’ve also been sleeping really well so 🤷🏻♀️ #Whole30#AprilWhole30#IAmWhole30
