Oh how I LOVE a good chimichurri sauce! This is hands down one of my favorite summer dinners 🌱🍋 Fresh herbs, tons of garlic, a bit of spice and tangy lemon juice all spooned over baked salmon and ready in less than 20 minutes! Doesn’t get much easier than that! ✨

I've got a college degree, know how to build porches and structures, can do electrical, plumbing, small engine mechanical work, home construction and then go bake bread and pies, raise 7 kids (2 with special needs), homeschool and keep up with the best of them. Do you roll down the aisles of your grocery store only looking for organic products? Have you ever grabbed a bag of coffee off the shelf over another because it was organic? What benefits does organic coffee have over non-certified organic?
🍃 Certified Organic does not = no pesticides!
To be certified organic, a crop must be:
1. Produced without using banned materials and methods like sewage sludge, radiation, or genetic engineering.
2. Must be overseen by a USDA Organic Program certifying agent
Many practices and fertilizers are allowed. There are approved synthetic compounds allowed in the program.
🍃 Most coffee is organic
The vast majority of coffee farmers ranging from 48% in some countries like Mexico, to as high as 93% in Chilon live in poverty. They do not have the money to buy fertilizers and pesticides. The coffee often actually grows wild in parts of the world and farmers simply harvest it.
Bottom line: most coffee farmers can not afford the fertilizer and pesticides to grow their crop, and they grow it as organic as it comes.
Most farmers cannot even afford the CERTIFICATION by the USDA to be Certified Organic. It costs ok average about $1500-$3000 USD and 99.9% or more of all coffee is grown in third-world countries. Farmers cannot risk their entire livelihood spending a years’ earnings to be certified, only to POSSIBLY earn 15 cents more per pound for their coffee because it’s now Certified Organic.
Is Certified Organic coffee better quality? Nah.
There’s several variables that affect the quality of a crop:
☕️ plant genetics
☕️ soil composition
☕️ harvesting skill
☕️ plant health
Is this to say that Certified Organic Coffee is bad? Absolutely not. We should reward co-ops and farms that strive toward sustainability and making their methods eco-friendly. Many farmers who end up becoming Certified are trying to improve their crop and business on multiple fronts, so they end up seeing an increase in quantity sometimes. The intent to improve produces actions taken that altogether cause improvement.

You guys already know how I feel about these green beans. Between Mitchell and I think we’ve gone through 2 pounds this week 😂 at least it’s a veggie, right? You can find the green bean recipe in Monday’s post. & for the salmon, it literally melts in your mouth. The lemon adds the perfect kick 🍋
Here is the recipe:
1 pound wild caught salmon, patted dry
5 cloves of garlic, minced
1 lemon, juiced
1/3 cup avocado oil
1 tablespoon dried parsley
Preheat the oven to 350.
Mix the garlic, lemon juice, avocado oil & parsley in a bowl.
Place the salmon in a casserole dish.
Pour the the garlic sauce over the salmon.
Whole30 Breakfast Hash 😍 breakfast this morning is this hearty and savory hash made with chicken apple sausages, bacon, Brussels and sweet potatoes 👏🏼 the perfect post-run and pre-long day of work fuel 😉 I pan fried the bacon first then let everything else cook in the bacon fat for elevated flavor. Hi Protein Veggie Burger from @traderjoes with some quinoa and kale blend and sautéed broccoli with @alexiafoods butternut squash rice 🔥
Today we had the mother of all burgers... on a lettuce bun!
You make a lettuce bun by cutting an iceberg lettuce almost in half. You take out the 'heart' of the lettuce and divide the rest in a big bit (the 3 outer leaves) and a smaller bit (a few inner leaves).
Naomi put mayo, mustard, hot sauce, pickles, avocado, tomato, some nutritional yeast and a burger on the biggest bun. For herself she put an egg on it too.
Close it with the smaller bun.
We had some potatoes in ghee with it.
It is still a messy meal... but so good.
I am the main cook in the house, but on Thursdays Naomi always cooks me a meal. I enjoy the break So. Much. #naomicooksonthursday
Yet another honey-ferment use. I've posted about Paleo/AIP one-ingredient fruit "ice cream" before but here's a twist I tried with my leftover honey-fermented dates. In this case I cut up ripe banana and honey-fermented dates and mixed them together with some of the honey before freezing overnight (bottom photo 2). Alternately you could freeze the dates and honey separately and add the dates to already blended ice cream, just pulsing it in to keep the date pieces a bit bigger and chunkier. To blend any fruit ice cream, take out of the freezer and let stand for about 10 minutes. Then blend and return to freezer to re-harden some. I prefer to wait a few hours but a soft serve consistency will be ready pretty quickly. Tip: for a creamier ice cream use a food processor instead of a blender.

As my family well knows, I’m a big fan of stews or as I call it “TSIP” - Throw Stuff in a Pot. Braised beef tenderloin with asparagus, tomato and Arrachaca root (South American root akin to a cross between a parsnip and white sweet potato). I take a whole beef tenderloin, cut it up, freeze the good parts and use the “less desirable” parts in a stew. Braising takes meat that can be a bit tougher and makes it good eatin’. Don’t throw away those fatty cuts of meat, contrary to today’s popular belief your body needs clean fat.
Who says you can’t eat real food and eat well?

OK so I was already thinking about eating this dinner while eating my breakfast. GYRO BOWL from @paleorunningmomma. Her bowls never disappoint! This is probably one of the most flavorful ground beef recipes I’ve had. I followed the recipe for the ground meat and cauliflower rice as is but I used a different recipe for the Tzatziki sauce. I also used the Instant pot to cook the meat and it came out delicious. I was trying to lower the fat in this dish overall to fit my macros (I could only afford 2 olives 😆). I added the roasted zucchini and the sautéed peppers and onions. This is going to be one of those dishes I have on my meal prep for 5 weeks in a row. So versatile! 🤩😋

Então vc diz: "Já sei, vou pegar uns galhos e acender outra fogueira!"
Vc faz uma pilha de galhos, risca um palito, dois, três... Mas não é tão fácil acender essa fogueira de galhos como foi a fogueira de papel...
Vc insiste e finalmente consegue acender a fogueira de galhos! Os galhos pegam fogo🔥! Uma fogueira linda, com chamas altas e consistentes! A fogueira fica acesa a noite toda... E mesmo depois que a chama diminui, as brasas continuam gerando calor (energia). Era tudo o q vc precisava pra passar uma noite tranquila, sem se preocupar em ficar alimentando a fogueira o tempo todo...
Assim acontece com pessoas que dão preferência à glicose (carbos) como combustível. É "fácil de queimar", mas precisa ser abastecida constantemente. Quando damos preferência às gorduras, elas são "mais difíceis de queimar", porém geram energia por muito mais tempo.
Vários atletas têm experimentado essa troca de combustível, de carbos por gorduras, e uma vez adaptados, estão adorando os resultados. Comem menos vezes por dia, conseguem treinar em jejum, não precisam repor glicose durante as provas e ainda apresentam melhora na composição corporal.

I love the Olympics. Winter, Summer, doesn't matter. Every 2 years when they come on, I devour them. I suddenly become a luge expert. I know all the rules of shuffleboard (and probably know where the local club is located). I have practiced my gold-medal podium wave. I am invested and involved.
And I know I'm not alone in this. Millions upon millions of people become obsessed with sports we thought were only done in Will Ferrell movies because the glory of the victory! Seeing that athlete on that podium, tears streaming down, listening to the anthem that runs in our blood. IT'S INTOXICATING.
But my favorite stories are the personal interest stories that dive in to what the athlete went through to get where they are. What it took to get on that podium, the sacrifice of the win.
Friend, here's the reminder today : THIS IS ALL BUILDING TO SOMETHING. It may seem like you're stepping backwards. It may feel like nothing at all has changed and never will and it's all for nothing.
But those are short-term views for a long-term victory.
Tell God about your sufferings today. And then allow him to respond with the anthem of victory that he is already carrying over you.And then believe him when he says he's already won.

This is another easy to make lunch/dinner recipe on those busy weekdays especially during hot summer days. Use lettuce as a wrap to replace taco/bun to provide a gluten free wrap option. 5 min prep time. 10 to 15 min cook time.
Healthy Lettuce Wraps for low-carb & gluten free lunch
Garlic 2 cloves, finely chopped
Onion 1 medium size, diced
Bell peppers 2 to 3 (green, orange, yellow or red), diced
Beef strips/chicken strips /pork strips 500gram (you can also use minced meat like minced chicken, turkey, beef or pork) marinated with some salt and black pepper
Vegan option: replace the meat with some beans or peas like green peas, broad beans, kidney beans etc
Romaine, iceberg or batavia lettuce washed and set aside
Olive oil 2 to 3 tablespoons
Dried chilli flakes (optional)
Freshly chopped red or green chilli (optional)
1. Heat the olive oil in a cooking pan. Saute the garlic and onion until they turn golden.
2. Put the meat into the pan. Stir and cook for 2 to 3 minutes.
3. Put in the diced bell peppers. Stir well with the meat. Add 2 tablespoons of water if it gets too dry.
4. Cook for another 5 to 10 minutes until the meat is cooked. Stir occasionally.
5. Season with salt and some dried chilli flakes or fresh chilli if you want to have some kick!
Once cooked, serve it hot with lettuce wraps.

Okay here’s to the juicy stuff! In defense of beef:
* Red meat is a great source of bioavailable (meaning high absorption rate): B12, niacin, B6, iron, zinc, and phosphorus * Good source of omega 3 fatty acids (anti-inflammatory fats), riboflavin, pantothenic acid, selenium, and Vitamin D
* Contains 28-36 grams of protein per 100g of cooked meat
* Because the water content decreases during cooking the nutrient contents become more concentrated * Highly digestible, around 94% compared to with digestibility in beans of 78%
* Provides essential amino acids (building blocks fo the body): lysine, threonine, methionine, phenylalanine, tryptophan, leucine, isoleucine, valine, glutamine. * 48% saturated fats (great for hormones)
* 11-29% PUFA (pasture-raised has higher omega3 ratio)
* Good source of choline, as a precursor of a number of compounds, including neurotransmitters and membrane phospholipids.
* CLA (conjugated linoleic acid): has antioxidant and immunomodulatory properties.
Need dinner in a hurry? You have to try this super simple 10 minute skillet Asian chicken!
It pairs perfectly with rice, cauliflower rice, zoodles, veggies or lettuce wraps!
With just 6 ingredients and a hot skillet you are going to love how easy this is to make!
Here’s what you need:
3 tbsp coconut aminos (or tamari or soy sauce)
1 tbsp rice wine vinegar
1 tbsp garlic olive oil
1 green onion, chopped
1/2 tbsp fresh grated ginger (I love @the_ginger_people )
1 pound boneless skinless chicken breast
Make the marinade/sauce by combining the first 5 ingredients in a large bowl.
Cut the chicken into bite size pieces (use kitchen shears). Put chicken in Asian marinade and stir well.
Get a cast iron skillet or stainless steel pan HOT.
Cook the chicken for 5 minutes without moving it around the pan. After 5 minutes, stir it around until brown on all sides (3-5 minutes).
Serve with your favorite sides.

This fried plantain recipe is nothing new to me - fried plantains are one of my favorite sides to make to go with almost anything (breakfast, lunch, dinner, or snacking!). It just was about time that I write a quick recipe post on how to make them for y’all! It only requires 3 ingredients - ripe plantains, oil, & sea salt - & 10 minutes! A mini supplement Thursday post for you guys because we can all use a little adrenal and thyroid support! When life has you going a million miles an hour, this is especially important.
For your thyroid: endoflex and thyromin work with your body to bring it into balance and also work to nourish your thyroid. I've been using Endoflex over the thyroid (on the front of the throat) and over the adrenals (over the lower back/kidney area) to help support energy levels and healthy adrenals!
For your adrenals, oils to check out: Nutmeg, En-r-Gee, Ninxga Red, and Ninxga Nitro. Apply over the adrenals, to the wrists and do your Ningxia daily! I do a little in the morning and a little in the afternoons when I feel a slump coming on!
I also suggest the book Taming the Dragon Within to really learn more and educate yourself on supporting your adrenals and thyroid with Young Living Essential oils.
