The human element in terroir is fascinating and I love to see resourceful people solve problems and move forward. I’ve taken all these past experiences from my travels and in one way or another applied the principles to my grapegrowing or winemaking here at VIADER. The more “global” I can become as a winemaker, the better I feel the wines will become. The more I taste and explore, the better my palate becomes. The most valuable lesson is simple, I’m never done learning how to become a better winemaker or grower...

So, it’s time for me to be vulnerable. If you have been watching my stories, you have gotten the hint by now that I have taken on the role of health coach. This is something that I am proud of and scared to share at the same time. Why? I’m not athletic, and I drink wine every single day. ⠀
I honestly got into this coaching thing by accident... I went on a hiking trip in Switzerland with my dad and uncle last summer, and I almost quit every hike from being so out of shape. The only thing that kept me going to the top of each mountain was the prospect of trying a new Swiss wine at the finish line (I have priorities 😂). I was so scrawny and out of shape that I wasn’t fully able to enjoy the beautiful nature and views. ⠀
That’s why I made my goal for 2020 to work my way up to doing a real push-up. I know that sounds ridiculously easy to so many of you, but I’ve never even been able to do a proper push-up (even from my knees) in the past. I was too embarrassed to go to the gym, so I took a chance on an at-home fitness program. I’m proud to say that just 8 weeks of working on my strength, I can officially do a real push-up! ⠀
Despite my lack of physical strength, I decided to believe in myself. I decided that I have a lot to share, and I’m worthy of being a coach. Yes, I’m not the strongest (but I’m working on it 💪). Yes, I drink wine (🍷🍾) on the daily. However, I’m deciding to empower myself and anyone else who is willing to take that leap of faith w/ me! ⠀

🍷2015 TREANA BLANC RHONE BLEND🍷
Treana Blanc is a stunning example of a new world Rhone blend with aromas and flavors of pineapple, dried apricot, peach and Clementine orange that combine with floral notes of honeysuckle and elder flower. Sweet notes of marzipan, honey, graham cracker along with cinnamon and vanilla round out this complex, full-bodied and racy wine.
Fire Roasted Butter Bird 🔥 Not only is this chicken injected with butter, it is basted with a sweet honey buttery glaze while grilling.
1 Whole chicken
2 tbsp - McCormick Grill Mates® Montreal Chicken Seasoning
½ cup - Unsalted butter, melted
¼ cup - Kitchen Basics® Original Chicken Stock
1 tbsp - Cognac
Sweet Honey Glaze
½ cup - Unsalted butter
½ cup - Honey
2 tbsp - Ketchup
1 tsp - Worcestershire
½ tsp - McCormick Grill Mates® Montreal Chicken Seasoning
-Preheat your grill for direct grilling at 400°F;
Using kitchen shears or a sharp knife, remove the chicken’s backbone and make a cut through the breastbone from the inside so the chicken can lay flat like an open book;
Brush the chicken with the melted butter and generously season with McCormick Grill Mates® Montreal Chicken Seasoning; Repeat on both side;
-In a measuring cup, combine the cognac and chicken stock to the remaining melted butter; Using a marinade injector, inject the bird in both breasts and thighs with the liquid;
-Make the glaze: Combine all Sweet Honey Glaze ingredients in a skillet or saucepan and bring to a boil for 10 minutes;
-Lay the chicken skin side down on your hot grill grate and place a cast iron skillet on top of the bird; Grill for 8 to 12 minutes then flip the bird and put the skillet back on top; Grill for another 8 to 12 minutes;
-One the chicken is fully cooked, brush the bird with sweet honey glaze and grill one more minute for the sauce to caramelise; Remove the chicken from the grill and let rest for 5 minutes before serving.
