You may be aware that it’s almost impossible to book a seat at this 8-seater counter. It’s not an issue of money as it is relations....with chef Saito’s regulars since his original hole-in-a-wall in a #Roppongi-Itchome carpark.

  • The way into my heart is through a mille feuille. (Or a Japanese style strawberry shortcake). Perfectly crisp and custardy, please. Or in this case, made 10x more interesting by filling it with buffalo yogurt cream and raspberry sorbet (#1).

(I'll also take @pierrehermeofficial's 2000 Feuilles any time any day; it is legit the best dessert ever created... *sheds tear for my tree nut allergy*)

Or a solid housemade sourdough with a nice crust (#6/#7). I don't usually like bread but when the sourdough is good, you got me.

Or a perfectly handmade pappardelle - with poultry ragu (#2). Definitely the best pasta we had the entire trip.

Citrus fruit, bergamot flavoured panna cotta and meringue (#3) was so incredibly balanced - hits the flavours and creaminess but still managed to be a refreshing end to the meal.

If all else fails, just give your diners lots of free stuff (amuse bouche, petit fours) and that should keep them happy for a bit. It worked for me 🤷

Random dinner place I googled whilst in the heart of touristy Milan turned out to be one of the most enjoyable meals. The unexpected things are the most beautiful.

On another note, can anyone teach me "how" to eat a mille feuille? How do you cut through all those layers of puff pastry without making a whole big mess?
