  • Good evening, it was an extremely busy day today so a quick and easy dinner was a must. This lentil bolognese with mushrooms over zucchini noodles was super easy and only took me 20 minutes to make. I was inspired by a recipe from @Publix where I got a sample but I changed a few things to make it quick and simple with a few less ingredients that I had in hand.

To make the lentil bolognese...
...
3-4 tablespoons olive oil.
2 large cloves garlic minced.
2 cups sliced white mushrooms.
1 cup diced tomatoes.
1 cup vegetable broth.
1 can lentils drained and rinsed.
2 medium zucchini’s spiralized.
Salt and pepper to taste.

Heat 2-3 tablespoons olive oil in a large pan until hot but not smoking. Add the garlic and let soften for about 30 seconds. Add the mushrooms and sauté tossing occasionally until tender about 2-3 minutes. Season with salt and pepper. Add the diced tomatoes and sauté for another minute until heated through. Add the veggie broth and lentils and bring to a light simmer. Continue to simmer for 5-7 minutes and season with more salt and pepper to taste. Remove from heat and serve hot over zucchini noodles. The heat from the sauce will soften the noodles just right. It’s so cozy, hearty and and delicious and you won’t be missing meat at all. Serves 4-6.

  • It’s a busy weekend for us celebrating both Passover and Easter and I’ve been spending most of my time preparing for it so I’m throwing it back to this grilled plate of goodness. Chicken and veggie skewers with grilled corn, avocado, plantain and tomato that I would enjoy very much right now..

A good tuna salad platter 🥗 for the win! 🙌🏼 The tuna 🐟 is made with white albacore tuna, avocado oil mayo, red onion and celery seasoned with @primalpalate new bae seasoning served over a bed of baby spinach 🍃with a hard boiled egg 🥚, avocado 🥑, tomato 🍅 and pickle chips 🥒.   • I was craving a loaded salad 🥗 today for lunch and I got a little carried away. I couldn’t help but to keep adding more and more goodness to it! Romaine 🍃with chili roasted chickpeas, avocado 🥑, half boiled eggs 🥚, kalamata olives, tomatoes 🍅, red onion, crumbled bacon 🥓 and feta cheese 🧀 drizzled with extra virgin olive oil, fresh squeezed lemon 🍋 and seasoned with salt and pepper.   • It’s been feeling a lot like summer around here lately and it’s bringing on all the grilling vibes. A perfect time to whip up these #lowcarb Grilled Salmon Burgers with Spinach and Feta for your next BBQ. I created this recipe for @AtkinsNutritionals, and I assure you it will not disappoint.   • I decided on a breakfast for lunch type of deal today, although it’s not much different then any other day. There is no certain type of meal that needs to be eaten at any specific time of day just because that’s what we are used to. So if you’re craving breakfast for lunch or dinner for breakfast, as long as it’s well balanced and nutrient dense it will be a winning meal!.

  • It was a falafel 🍃loving moment at the farmers market today on this 90 degree 🌞Saturday with the family. I found an awesome lemon tree 🍋, some organic produce 🥕🍅 and fresh gulf shrimp 🍤 and ahi tuna 🐟. I can’t wait to grill it up later and then go for a early evening walk around the lake once the temps cool down🌅. Now I’m getting ready to hang by pool 👙and cool off from this intense heat 🌞.
